I found this recipe in a Newspaper many years ago and I believe that it is an African dish if my memory is correct, although don't quote me on it. "This takes a little while to make but it's VERY delicious and worth the effort." The flavors are unique and wonderful!

3 lbs cooked chicken
1 tablespoon garlic salt
4 garlic cloves
3/4 cup vegetable oil (olive)
1/2 cup yellow onion, finely chopped
1 teaspoon ground ginger
1/2 green pepper, finely chopped
1 (16 ounce) can tomatoes
2 (6 ounce) cans tomato paste
1 tablespoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 teaspoon crushed red pepper
2 cups white rice (Jasmine)
5 cups water or 5 cups chicken stock
1/2 cup yellow onion, sliced
1 teaspoon poultry seasoning

Steps:

  • In a 10 inch skilled saute chicken which has been skinned, deboned, and cut-up; with garlic salt and 1/2 cup oil until lightly browned. Set aside.
  • In a 4 quart kettle saute chopped yellow onions, ginger and green pepper in 1/4 cup oil until onions are soft.
  • Add tomatoes and simmer 5 minutes. Add salt, black pepper thyme, tomato paste and simmer 10 minutes.
  • Add the cooked meat and crushed red pepper. Simmer 20 minutes.
  • In a 2 quart saucepan cook rice, chicken stock and onions until tender.
  • Serve the rice on a platter arranging the meat/sauce in the center.
  • I have made this and mixed all ingredients together with rice for my daughter to take to school for a sharing of African ethnic cooking. It was a big hit. Nearly everyone asked for the recipe.
  • This takes a little while to make but its delicious and well worth the effort.".

2 1/2 lbs roasting chickens, cut into 4-6 pieces
2 garlic cloves, crushed
1 teaspoon dried thyme
2 tablespoons vegetable oil
400 g chopped canned tomatoes
1 tablespoon tomato puree
1 onion, chopped
450 ml chicken stock
2 tablespoons dried shrimp, ground
1 green chili, seeded and finely chopped
1 1/2 cups long grain rice, washed

Steps:

  • Rub the chicken with the garlic and thyme and set aside.
  • Heat the oil in a saucepan until hazy and then add the chopped tomatoes, tomato puree and onion. Cook over a moderately high heat for about 15 minutes until the tomatoes are well reduced, stirring occasionally at first then more frequently as the tomatoes thicken.
  • Reduce the heat a little, add the chicken pieces and stir well to coat with the sauce. Cook for 10 minutes, stirring, then add the stock or water, the dried shrimp and the chilli. Bring to a boiland simmer for 5 minutes, stirring occasionally.
  • Put the rice in a separate saucepan. Scoop 1 1/4 cups of the sauce into a measuring jug, top up with water to 450ml and stir the liquid into the rice.
  • Cook covered until the liquid is absorbed, then place a piece of foil on top of the rice, cover thepan with a lid and cook over a low heat for 20 minutes until the rice is cooked, adding a little more water if necessary.
  • Transfer the chicken pieces to a warmed serving plate. Simmer the sauce until reduced by half. Pour over the chicken and serve with rice.

I have been making this simple dish for years. It only contains 2 main ingredients but it is full of flavor.

2 -3 boneless skinless chicken breasts
2 (5 ounce) bags saffron yellow rice (I use Mahatma brand)
2 tablespoons butter
3 1/3 cups water
salt & pepper

Steps:

  • Remove any excess fat from the chicken then cut into bite sizes pieces.
  • Sprinkle the chicken with salt & pepper before cooking. Then lightly spray a large pot with cooking spray and cook the chicken until almost done.
  • Drain any liquid from the chicken. Leave the chicken in the pot & add 3 1/3 cups of water & 2 tablespoons of butter. Bring to a boil then stir in the rice mix. Reduce heat & simmer, covered, for 20 minutes.

1 (6 ounce) jar Kraft Old English cheese spread
1 1/2 teaspoons mayonnaise
1/2 teaspoon garlic salt (can use garlic powder if watching salt intake)
1/2 teaspoon seasoning salt
1 (8 ounce) can crabmeat
6 English muffins, split

Steps:

  • Combine all ingredients (except muffins) till well combined.
  • Spread evenly over split muffins (12 pieces).
  • With sharp knife, cut into small pie shaped slices (I usually cut each in 4 pieces, but if you need more, you can cut them smaller).
  • Place on cookie sheet.
  • Put cookie sheet in freezer until crabbies are frozen.
  • When frozen, remove from cookie sheet and place in plastic bag. Return to freezer and store till ready to use.
  • When ready to serve, place on cookie sheet.
  • Put under broiler until bubbly and crisp, approximately 5 minutes.
