Time 3h10m

Yield 36

Number Of Ingredients 9

2 cups milk
2 (.25 ounce) envelopes active dry yeast
1 quart water, divided
⅔ cup shortening
1 cup white sugar
2 eggs
1 teaspoon salt
2 teaspoons anise seeds
8 cups all-purpose flour, or as needed

Steps:

  • Pour the milk into a pan, and heat just until bubbles form around the edge of the pan. Remove from heat and cool to lukewarm (110 degrees F/45 degrees C).
  • Dissolve yeast in 1 cup lukewarm (110 degrees F/45 degrees C) water. Allow to rest 5 minutes.
  • Beat the shortening with the sugar, eggs, salt, and anise seeds in a large mixing bowl. Stir in the milk and yeast mixture. Gradually mix in the flour, stirring to make a soft dough (dough should not be sticky). Add more flour if needed. Cover bowl with a clean cloth, and let dough rise in a warm place until doubled in size, about 1 1/2 hours.
  • Lightly grease 2 baking sheets. Punch down dough, divide into two pieces, and roll out each piece into a rectangle about 1/2 inch thick. Cut dough into 8x1 inch strips. Twist each strip into a simple knot, and place on prepared baking sheet. Cover with a clean cloth, and allow to rise until doubled in size, about 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour 1 quart water into a pan and bring to a boil over high heat. Dip each roll quickly into the boiling water, and return to baking sheet.
  • Bake rolls in preheated oven until tops are golden brown, 10 to 15 minutes.

Rye Twists with Anise, Fennel and Orange image

Categories     Bread     Mixer     Bake     Vegetarian     Orange     Fennel     Fall     Anise     Bon Appétit

Yield Makes 16

Number Of Ingredients 12

2 tablespoons aniseed
1 tablespoon fennel seeds
2 cups warm water (105°F to 115°F)
3 envelopes dry yeast
1/2 cup plus 2 tablespoons unsulfured (light) molasses
6 tablespoons vegetable oil
3 1/2 cups (or more) bread flour
2 1/2 cups whole grain rye flour
2 tablespoons (packed) grated orange peel
2 1/2 teaspoons salt
Cornmeal
Additional aniseed and fennel seeds

Steps:

  • Place aniseed and fennel seeds in self-sealing plastic bag; close bag. Using mallet, pound seeds until coarsely crushed.
  • Place warm water in large bowl of electric mixer fitted with paddle attachment. Sprinkle yeast over and stir to blend. Let stand until yeast dissolves, about 10 minutes. Mix 1/2 cup molasses and oil into yeast mixture.
  • Stir 3 1/2 cups bread flour, whole grain rye flour, orange peel, salt and crushed aniseed and fennel seeds in large bowl to blend. Add to yeast mixture. Beat mixture at medium speed until firm but sticky dough forms, about 4 minutes. Turn dough out onto floured work surface; knead until smooth and elastic, adding more bread flour as necessary if dough is sticky, about 8 minutes.
  • Form dough into ball. Oil large bowl. Add dough to bowl, turning to coat. Cover bowl with plastic wrap, then kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.
  • Sprinkle 2 baking sheets generously with cornmeal. Punch down dough. Turn dough out onto floured surface; knead 3 minutes. Divide dough into 16 equal portions. Cut each portion into 2 equal pieces. Roll each piece into 8-inch-long rope. Grasp 2 ropes at each end and twist ropes together, making about 4 turns. Pinch twisted ropes 1 inch from each end. Place twist on prepared sheet. Repeat forming of twists with remaining dough pieces. Cover with kitchen towels. Let rise in warm draft-free area until doubled in volume, about 40 minutes.
  • Position 1 rack in center and 1 rack in top third of oven; preheat to 375°F. Brush tops of rolls lightly with 2 tablespoons molasses (do not allow molasses to drip onto sheets under rolls). Sprinkle rolls with additional aniseed and fennel seeds. Bake until rolls are golden and sound hollow when tapped on bottom, switching top and bottom baking sheets halfway through baking, about 20 minutes. Transfer to racks and cool. Serve warm or at room temperature. (Can be made 2 weeks ahead. Wrap in foil and freeze. If desired, rewarm thawed wrapped rolls in 350°F oven about 10 minutes.)

PERUVIAN - PAN DE ANIS - ANISE BREAD

Peruvian - Pan De Anis - Anise Bread image

This is another recipe by Marian Blazes posted here for the ZWT-7 Tour of South/Central America. You will not be able to resist these sweet little aniseed breads when they are fresh out of the oven. They are rolled into olive-like spirals and baked. Typically they are served with a meal, or as a midmorning snack with coffee.

ITALIAN ANISE BREAD

Italian Anise Bread image

My family has been making this Easter bread for generations. It's origins are in a family bakery owned by my great-great aunts off the boat from Italy. My mom and I are the only remaining individuals who know how to make this, so I'm posting it hoping to share it with others. It is made the old world way, so it is not quick, but it is delicious and well worth the work and wait.

MOLLETES - MEXICAN ANISE SEED ROLLS

Molletes - Mexican Anise Seed Rolls image

Molletes are traditionally served as a coffee cake. This bread freezes well. Posted in response to a recipe request.

Provided by Molly53

Categories     Yeast Breads

Time 2h25m

Yield 36 serving(s)

Number Of Ingredients 10

1 package active dry yeast
2 eggs
2 tablespoons sugar
1 teaspoon salt
2 cups warm water (105°-115°F)
1 teaspoon anise seed
1/2 cup shortening
6 -7 cups flour
1 1/2 cups sugar
margarine

Steps:

  • Dissolve yeast and 2 tablespoons sugar in warm water in a large mixing bowl; set aside.
  • In a medium-sized mixing bowl, cream shortening with remaining sugar.
  • Beat in eggs; add salt and anise seed.
  • Add creamed mixture to yeast and thoroughly combine.
  • Gradually add flour to mixture until a moderately firm dough is formed.
  • Knead dough on a lightly floured board until it is smooth and elastic.
  • Place dough in a greased bowl, cover, and allow to rise until double in size.
  • Punch dough down, knead, and allow to double in size again.
  • Knead dough and shape into round balls the size of an egg.
  • Preheat oven to 375°F.
  • Place in a well-greased pan, cover, and allow to double in size again.
  • Lightly brush with margarine and bake for 20-25 minutes.

Tips:

  • Activate the yeast properly: To ensure the success of your aniseed yeast rolls, it's crucial to activate the yeast correctly. Make sure to use warm milk (around 110°F) and allow the yeast to bloom for 5-10 minutes before adding it to the dough.
  • Knead the dough thoroughly: Proper kneading helps develop the gluten in the dough, resulting in a soft and elastic texture. Knead the dough for at least 5-7 minutes until it becomes smooth and pliable.
  • Let the dough rise in a warm place: A warm environment encourages the yeast to grow and ferment, causing the dough to rise. Place the dough in a warm spot, ideally between 75-85°F, for about an hour or until it doubles in size.
  • Shape the rolls carefully: When shaping the rolls, be gentle to avoid deflating the dough. Roll out the dough evenly and cut it into equal pieces. Fold or roll the pieces into the desired shape without overworking the dough.
  • Proof the rolls before baking: After shaping the rolls, allow them to proof for 15-20 minutes before baking. This final rise gives the rolls a chance to develop their full flavor and texture.
  • Bake the rolls until golden brown: Bake the rolls at a moderate temperature (350-375°F) for 15-20 minutes or until they turn golden brown. Keep an eye on the rolls to prevent overbaking, as this can dry them out.

Conclusion:

Aniseed yeast rolls are a delectable treat that combines the aromatic flavors of aniseed and yeast with a soft and fluffy texture. By following the tips and steps outlined in this recipe, you can create these delightful rolls at home and enjoy their unique taste and aroma. Remember to activate the yeast properly, knead the dough thoroughly, allow for adequate rising, and bake the rolls until golden brown. With a little patience and care, you'll be able to impress your family and friends with this classic and flavorful bread.
