2 c water
1 1/2 c sugar
3 Tbsp lemon juice
1 Tbsp aniseed
6 c honeydew, cubed
4 c fresh pineapple, cubed
2 1/2 c cantaloupe, cubed
2 c fresh green seedless grapes
2 c fresh red seedless grapes
2 c orange slices, cubed
1 c fresh strawberries, sliced
1 medium firm banana, sliced
2 kiwi fruit, peeled and sliced

Steps:

  • 1. Combine water, sugar, lemon juice and aniseed in a saucepan over medium-high heat; bring to a boil. Reduce heat to medium; cook, uncovered, for 40 minutes or until mixture is slightly thickened and reduced by one-third (about 1-1/2 cups). Remove from heat. Cover and cool to room temperature, about 30 minutes.
  • 2. Meanwhile, combine honeydew, pineapple, cantaloupe, grapes and oranges in a large bowl. Pour aniseed mixture over the fruit; toss to coat.
  • 3. Cover and chill at least 1 hour. Just before serving, add strawberries and banana; gently toss. Garnish with kiwi.

3 large pink grapefruits, peeled and segmented
3 small oranges, peeled and segmented
1 pommelo or white grapefruit, peeled and segmented
1/4 cup fresh or canned lychees (about 8)
1/2 large pomegranate, seeded, some set aside for garnish
1/4 cup orange juice
1/4 cup good-quality grade A maple syrup
1/4 teaspoon ground cinnamon
2 star anise
Fresh mint sprigs, for garnish

Steps:

  • Prepare the fruit and chill in the fridge.
  • Just before serving, in a small saute pan, warm the orange juice, maple syrup, cinnamon and star anise and mix well to infuse their flavors. Remove from the heat and chill in the fridge.
  • Just before serving, arrange the fruit into shallow dessert bowls, drizzle with the chilled syrup and sprinkle with the extra pomegranate seeds. Serve immediately, garnished with fresh mint.

1/3 cup granulated sugar
1 serrano chile, halved
1 whole dried star anise
7 to 8 cups mixed cut fruit, like kiwi, peaches, plums, raspberries, blueberries, blackberries, mango, pineapple, oranges, grapefruit, pears or bananas
2 teaspoons chopped tarragon
2 teaspoons chopped basil
Flaky sea salt, to taste
Black pepper, to taste

  • Place sugar, 3/4 cup water, chile and star anise in a small pot and bring to a boil. Simmer for 10 to 15 minutes until the mixture is as thick as maple syrup and spicy tasting. Strain syrup. (Syrup can be made up to 1 week in advance; store in the refrigerator.)
  • Toss fruit with half of the sugar syrup, the tarragon and the basil. Add more syrup to taste, depending on how sweet and spicy you want the salad. Season very lightly with salt and pepper. If desired, add dollops of mascarpone or crumbled ricotta salata on top.
