OLIVE OIL-ANISE CAKES

Olive Oil-Anise Cakes image

The secret to these diminutive desserts' moist texture is olive oil, which also mellows the anise and orange that permeate each bite. Although the cakes are compelling on their own, a scoop of vanilla ice cream would sweeten the deal.

TOASTED ANISE-SEED CAKE SLICES

Toasted Anise-Seed Cake Slices image

Categories     Cake     Mixer     Egg     Dessert     Bake     Fall     Anise     Gourmet     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 12 slices

Number Of Ingredients 9

1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1/4 teaspoon salt
3 jumbo eggs
3/4 cup sugar
5 tablespoons unsalted butter, melted and cooled
1 1/2 teaspoons anise seeds, finely crushed
Special Equipment
a stand mixer fitted with whisk attachment

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour an 8- by 4- by 3-inch loaf pan.
  • Sift together flour, baking powder, and salt into a bowl.
  • Beat together eggs and sugar in bowl of mixer at high speed until tripled in volume and thick enough to form a ribbon that takes 2 seconds to dissolve when beater is lifted, 12 to 18 minutes.
  • Sift flour mixture over egg mixture in 3 batches, folding in each batch. Gently stir in cooled butter and anise seeds. Immediately pour into loaf pan and smooth top. Bake until top is golden brown and a wooden pick inserted in center of loaf comes out clean, 35 to 45 minutes. Cool loaf 5 minutes, then invert onto a cutting board and cool 30 minutes more.
  • Meanwhile, increase oven temperature to 400°F.
  • Trim ends of loaf and cut loaf crosswise into 1/2-inch-thick slices. Bake on a baking sheet until undersides are golden brown, about 7 minutes. Turn toasts over and bake until undersides are golden brown, about 5 minutes more.

Tips:

  • Use fresh anise seeds: Fresh anise seeds have a stronger flavor than ground anise seeds. If you can, use them in your cake for the best flavor.
  • Grind the anise seeds finely: If you're using whole anise seeds, be sure to grind them finely before adding them to the cake batter. This will help to distribute the flavor evenly throughout the cake.
  • Don't overmix the batter: Overmixing the batter can make the cake tough. Mix the batter just until the ingredients are combined.
  • Bake the cake at a moderate temperature: Anise cakes are best baked at a moderate temperature (350 degrees Fahrenheit) for about 1 hour. This will help to prevent the cake from drying out.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.

Conclusion:

Anise cakes are a delicious and unique treat that can be enjoyed by people of all ages. With their sweet and spicy flavor, these cakes are perfect for any occasion. Whether you're looking for a simple snack or a special dessert, an anise cake is sure to satisfy your sweet tooth.
