Did you ever buy those humongous bags of non frosted animal crackers? Yeah..not the cookies, but the plain old crackers. We are talking...no frosting..purely plain? Well...here you go....

2 c crushed animal crackers (i used non frosted)
8 oz cream cheese, room temperature
12 oz vanilla or white chocolate chips

Steps:

  • 1. In food processor, combine cracker crumbs and cram cheese. Roll into walnut size balls.
  • 2. Melt the chocolate (couple of methods to doing this). Dip balls into melted chocolate one at a time. Top with fun sprinkles.
  • 3. Place in refrigerator until hard.
  • 4. Melting chocolate: Using a microwave safe container (I like using pyrex glass measuring cups) start at one minute on 50% power. Stir. Add additional 30 sec intervals as needed. Double boiler: Place chips in top pan over simmering water. Do not let the pan touch the water. Stir until smooth.

2 cups graham crackers crumbs
1 cup melted butter
8 ounces cream cheese, room temperature
1 cup peanut butter (creamy or chunky - I used smooth)
3 cups powdered sugar
12 ounces melting chocolates or almond bark (white or dark) - a quick melting chocolate is easiest.
3 ounces melting chocolate or almond bark in a different color for the drizzle

Steps:

  • Place graham cracker crumbs in a bowl.
  • Pour melted butter over graham crackers and mix well.
  • Add cream cheese and peanut butter and mix well.
  • Add powdered sugar 1/2 cup at a time mixing well after each addition, until all has been added.
  • Scoop a Tablespoon sized amount of mixture out of bowl and roll into a ball.
  • Place this on a lined cookie sheet, spacing truffles close together 6 - 7 per row. Set aside.
  • Depending on size of your truffles and how close you space them, you may need two cookie sheets.
  • Melt chocolate according to package directions.
  • Gently place a truffle in the chocolate, roll it around and remove it with a fork.
  • Tap the fork on the side of the bowl, allowing the excess chocolate to drip off back into your chocolate bowl.
  • Gently place truffle back on cookie sheet and move on to the next one, until all are done.
  • Chocolate should harden quickly.
  • Once all truffles are covered, melt different color of chocolate according to package directions. Using a fork, drizzle the chocolate on top of your truffles for a pretty decoration.
  • Once dry, devour!

3/4 cup granulated sugar
10 tablespoons salted butter, softened
1/2 teaspoon vanilla extract
1 large egg
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1 tablespoon plus 1 teaspoon whole milk
2 cups powdered sugar
5 drops red food coloring

Steps:

  • For the dough: Add the granulated sugar and butter to the bowl of an electric mixer and beat until smooth. Add the vanilla and egg and beat again, scraping the sides of the bowl halfway through. Sift together the flour, baking powder and salt in a medium bowl. Alternate adding the dry ingredients and the milk to the mixer until the dough comes together. Flatten the dough into a disc and put it in a plastic bag. Refrigerate until chilled, about 2 hours.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or baking mats.
  • Roll out the dough to 1/4 inch thick and cut out as many cookies as you can in a variety of animal shapes. Place the cookies on the prepared baking sheets and bake until they're just barely done, 8 to 10 minutes; you want them to be set, but not brown. Let the cookies cool completely before decorating.
