- Spray gelatin mold with non stick cooking spray
- Add 4 cups of pineapple juice, sugar and gelatin to a pot on medium heat. Stir constantly for 10 minutes.
- Dissolve the cornstarch in the remaining pineapple juice (4 cups).
- Add this mixture to the one in the pot, continue stirring for another 10 minutes. The mixture will start to thicken.
- Pour the mix into mold.

- Line your baking tray with baking paper and dust with cornstarch. Set aside.
- In a small pot or saucepan, mix 3/4 cup cold or room temperature water with the cornstarch and white sugar.
- Bring to a boil, stirring very frequently. As soon as it starts bubbling, lower to medium heat and add remaining 1/4 cup water, icing sugar, and lemon juice.
- Stir frequently on medium heat for around 30 minutes, or until the mixture gets smaller in size, and thick enough that it's becoming harder to stir. (See notes above to know how to check for doneness)
- Add rosewater and orange blossom water, stir well.
- Transfer immediately to prepared baking tray.
- Use a lightly oiled rubber spatula or the back of a lightly oiled spoon to smooth the top of the mixture (it should be around 1 inch thick)
- Refrigerate for at least 4 hours, but preferably overnight.
- Once the mixture has set into its firmer texture, use a lightly oiled knife to cut into little cubes.
- But each cube with cornstarch and serve.

- 1. Make your Strawberry Jello as usual, using only 3 1/2 cups of water. Set aside and cool. Do not let it gel! Slice strawberries and pour 1/2 cup of sugar over them, stirring to coat. Set aside.
- 2. In a clear bowl, layer chunked up Angel Food cake, cooled Jello and 2 cups of the sliced strawberries. Add rest of cake, and layer again, ending with the entire carton of Cool Whip. Let set for two hours or longer.
- 3. Remember - this recipe can be made totally sugar free.
