½ cup packed brown sugar
2 large eggs ((room temperature))
½ cup salted butter ((very soft so it mixes in easily))
1 small box instant vanilla pudding ((dry mix..do not add milk!))
14 ounces sweetened condensed milk ((1 can))
¼ teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
1 unbaked pie crust

Steps:

  • Heat oven to 350 degrees Fahrenheit. Fill a 9" pie plate with pie crust.
  • In a large bowl, blend sweet potatoes and sugar with a hand mixer.
  • Add one egg, then beat the mixture.
  • Add the second egg and beat again.
  • Add softened butter, pudding mix, condensed milk, cinnamon and vanilla. Mix well.

1 1/2 cups canned sweet potatoes or 2 to 3 roasted, peeled and pureed sweet potatoes
3/4 cup sugar
2 large eggs
4 tablespoons (1/2 stick) butter, softened
1/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch salt
1 unbaked 9-inch pie shell, homemade or store-bought

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer, combine the sweet potatoes and 1/2 cup of the sugar, as well as the eggs, butter, milk, vanilla, cinnamon, nutmeg and salt. Beat until thoroughly blended and smooth. Pour the mixture into the pie shell and sprinkle with the remaining 1/4 cup sugar. Allow the pie to stand for 15 minutes before baking to allow the sugar to melt.

1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon

1 (9 inch) unbaked pie crust

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

2 medium sweet potatoes (about 1-1/2 pounds), peeled and cubed
1/3 cup butter, softened
1/2 cup sugar
2 large eggs at room temperature, lightly beaten
3/4 cup evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. 1 ½ pound sweet potatoes (washed and scrubbed (equals about 3 cups when softened and peeled))
12 oz evaporated milk (1 can)
1 cup light brown sugar
2 eggs
5 tablespoons butter (unsalted butter, melted (or vegan butter))
2 tablespoons vanilla extract
1 teaspoon ginger (minced)
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt

Steps:

  • Grease a 9-inch pie pan and set it aside.
  • See my recipe HERE for homemade almond flour pie crust, or you can use a store-bought pie crust, dough, or pie shell that may or may not come with its own pie pan.
  • Pro tip: Use an Instant Pot pressure cooker to soften and peel the sweet potatoes quickly and almost effortlessly!
  • Open the Instant Pot lid and fill the stainless-steel inner pot with water to the ½ mark.
  • Add the scrubbed sweet potatoes to the pot of water.
  • Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 12 minutes to loosen the potato skin.
  • When the cooking time is finished, allow a natural pressure release for at least 12 minutes.
  • To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
  • Pour the water and sweet potatoes into a colander in the sink to drain the hot water from the potatoes.
