Time 5m

Yield 4 serving(s)

Number Of Ingredients 6

1/2 lb feta cheese
3 tablespoons extra virgin olive oil
1 clove garlic, thinly sliced
1 tablespoon minced of fresh mint or 1 teaspoon crumbled dried mint
1/4 teaspoon red pepper flakes, plus more as needed
6 pepperoncini peppers, chopped (pickled green peppers)

Steps:

  • In a food processor, combine the cheese, olive oil, garlic, mint, red pepper flakes and peperoncini and process until smooth.
  • Taste and add more red pepper flakes or peperoncini, if desired.

Tips:

  • Choose the right feta cheese: Use a high-quality feta cheese that is firm and crumbly. Avoid using a soft or spreadable feta, as it will not hold its shape in the spread.
  • Roast the red peppers: Roasting the red peppers brings out their natural sweetness and flavor. You can roast the peppers in the oven or on a grill.
  • Use a food processor: A food processor is the easiest way to make kopanisti. It will help you to achieve a smooth and creamy consistency.
  • Season to taste: Taste the kopanisti before serving and adjust the seasonings accordingly. You may want to add more salt, pepper, or lemon juice.
  • Serve with pita bread, crackers, or vegetables: Kopanisti is a versatile spread that can be served with a variety of accompaniments. Try serving it with pita bread, crackers, vegetables, or even grilled meats.

Conclusion:

Angela's Kopanisti is a delicious and easy-to-make spread that is perfect for any occasion. It is a great way to use up leftover roasted red peppers, and it is also a healthy and flavorful addition to any meal. Whether you are serving it as an appetizer, a snack, or a side dish, this kopanisti is sure to be a hit.
