ANGEL HAIR WITH FRESH TOMATO SAUCE

Provided by Valerie Bertinelli

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 8

Kosher salt
1 1/2 pounds ripe on-the-vine tomatoes, finely chopped
1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
12 ounces angel hair pasta
1 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup sliced basil

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
  • Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

ANGEL HAIR WITH BALSAMIC TOMATOES

Angel Hair with Balsamic Tomatoes image

This tastes like something I once had at Olive Garden, except I think they made it with fresh tomatoes. That limits it to a seasonal dish, since winter tomatoes, frankly, stink. Since this recipe uses canned tomatoes, you can feel gourmet at anytime. It goes together pretty quickly, especially after the first time you prepare it.

Provided by ThatBobbieGirl

Categories     Lunch/Snacks

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 cloves garlic, minced
1 tablespoon olive oil
1 (28 ounce) can diced tomatoes
3 tablespoons balsamic vinegar
salt
fresh ground black pepper
2 tablespoons dried basil, crushed (or twice the amount of fresh)
1 lb angel hair pasta, uncooked
parmesan cheese

Steps:

  • Open the can of tomatoes.
  • Do not drain, but dump the whole thing in a non-metallic bowl.
  • Stir in the balsamic vinegar, black pepper, basil, and salt if you really think you need it.
  • Most canned tomatoes have enough salt for this, and if you're using no-salt tomatoes, its probably because you're not SUPPOSED to have the salt.
  • So drop the salt shaker, buddy.
  • Let the tomatoes, et al, stand about 10 minutes.
  • Sauté garlic in olive oil until translucent.
  • Do not brown.
  • Remove skillet from the burner, leaving garlic and oil in pan.
  • Set aside.
  • If you haven't already, put on a pot of water to boil for the pasta.
  • A big pot, so it has lots of elbow room.
  • People should stick together, not pasta.
  • Hmmm, that should be a commercial.
  • Drain the tomatoes, catching the juice in the skillet with the sauteed garlic.
  • Bring this to a boil and then simmer until the liquid is reduced by about 1/3.
  • It needs to do this in order to concentrate the flavors a bit.
  • While the liquid is reducing, drop the pasta into the boiling water, and cook according to package directions, just until al dente.
  • When the pasta is done, drain and keep hot if the sauce is not done yet.
  • Once the liquid has reduced enough, add the tomatoes, and heat briefly.
  • You want them to get HOT, not MUSHY.
  • Pour all this over the hot pasta and toss.
  • Serve immediately, nice and hot, passing parmesan to let everyone top their own.
  • This goes nicely with my Green Bean Compromise and a tossed salad with my Extremely Bad Breath Garlic& Green Olive Dressing, but serve what you like.
  • I won't mind.

ANGEL-HAIR PASTA WITH FRESH TOMATO SAUCE

Angel-Hair Pasta with Fresh Tomato Sauce image

Provided by Ian Knauer

Categories     Garlic     Pasta     Tomato     Vegetarian     Quick & Easy     Lemon     Basil     Summer     Gourmet

Yield Makes 6 first-course servings

Number Of Ingredients 10

1 small garlic clove
3 lb tomatoes
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon sugar (optional)
1/2 teaspoon black pepper
1 lb dried capellini (angel-hair pasta)
1/2 cup chopped fresh basil
Accompaniments: finely grated Parmigiano-Reggiano
extra-virgin olive oil for drizzling (optional)

Steps:

  • Mince garlic and mash to a paste with a pinch of salt using a large heavy knife.
  • Core and coarsely chop two thirds of tomatoes. Halve remaining tomatoes crosswise, then rub cut sides of tomatoes against large holes of a box grater set in a large bowl, reserving pulp and discarding skin. Toss pulp with chopped tomatoes, garlic paste, lemon juice, salt, sugar (if using), and pepper. Let stand until ready to use, at least 10 minutes.
  • While tomatoes stand, cook pasta in a 6- to 8-quart pot of boiling salted water, uncovered, until al dente, about 2 minutes. Drain in a colander and immediately add to tomato mixture, tossing to combine. Sprinkle with basil.

Tips:

  • Choose ripe avocados: The riper the avocados, the creamier and more flavorful they will be. Look for avocados that are dark green or black in color and slightly soft to the touch. Avoid avocados that are bruised or have blemishes.
  • Use fresh tomatoes: Fresh tomatoes add a bright and juicy flavor to the dish. Choose tomatoes that are ripe and in season. Avoid tomatoes that are bruised or have blemishes.
  • Use high-quality olive oil: Olive oil is a key ingredient in this dish, so it's important to use a good quality oil. Look for an extra virgin olive oil that has a fruity and peppery flavor.
  • Don't overcook the angel hair pasta: Angel hair pasta cooks very quickly, so it's important to cook it al dente, or slightly firm to the bite. Overcooked angel hair pasta will be mushy and bland.
  • Season the dish to taste: This dish is simple, so it's important to season it to taste. Add salt, pepper, and lemon juice to taste until you reach the desired flavor.

Conclusion:

Angel hair pasta with avocado and tomatoes is a light and refreshing dish that is perfect for a summer meal. It's easy to make and can be tailored to your own preferences. For a vegan version, simply omit the Parmesan cheese. For a more flavorful dish, add some grilled shrimp or chicken. This dish is also a great way to use up leftover avocado and tomatoes.
