Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 8

Kosher salt
1 1/2 pounds ripe on-the-vine tomatoes, finely chopped
1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
12 ounces angel hair pasta
1 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup sliced basil

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
  • Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your sauce will be.
  • Don't overcrowd the pan: When cooking the tomatoes, don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to stick.
  • Cook the tomatoes until they are soft: Cook the tomatoes until they are soft and have released their juices. This will help to develop the flavor of the sauce.
  • Season the sauce to taste: Season the sauce to taste with salt, pepper, and other herbs and spices. You can also add a pinch of sugar to help balance the acidity of the tomatoes.
  • Use high-quality pasta: Use high-quality pasta for the best results. Angel hair pasta is a good choice for this recipe because it cooks quickly and is delicate.
  • Cook the pasta al dente: Cook the pasta al dente, or to the point where it is still slightly firm to the bite. This will help to prevent it from becoming mushy.
  • Serve the pasta immediately: Serve the pasta immediately after it is cooked, topped with the tomato sauce and grated Parmesan cheese.

Conclusion:

This easy angel hair pomodoro recipe is a delicious and satisfying meal that is perfect for busy weeknights. The combination of ripe tomatoes, garlic, basil, and Parmesan cheese creates a flavorful and aromatic sauce that is sure to please everyone at the table. Serve it with a side of crusty bread or a green salad for a complete meal.
