ANGEL-HAIR PASTA WITH SAUTEED OYSTERS AND CHORIZO

Angel-Hair Pasta with Sauteed Oysters and Chorizo image

In this easy pasta course, chorizo -- a cured-pork sausage seasoned with chili powder and paprika -- is a lively complement to cooked oysters and a refreshing departure from the smoked bacon commonly paired with them.

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 14

3 tablespoons extra-virgin olive oil
4 ounces dried, hot chorizo sausage, thinly sliced into rounds
1/4 cup ( 1/2 stick) unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon paprika
1/4 teaspoon freshly ground white pepper
Pinch of cayenne pepper
Coarse salt
2 tablespoons sherry
1 1/4 cups heavy cream
2 dozen shucked fresh oysters
8 ounces angel-hair pasta
1/4 teaspoon finely grated orange zest
2/3 cup strained oyster liquor

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat oil in a large saucepan over medium-high heat. Add chorizo. Cook, stirring, until crisp, about 3 minutes. Transfer to a plate lined with paper towels, and let drain. Wipe out pan.
  • Melt butter in pan over medium heat. Add flour, spices, and 1 teaspoon salt. Cook, whisking constantly, 3 minutes (do not brown). Add sherry, and cook, whisking, 1 minute. Whisk in cream and oyster liquor. Bring to a simmer, and whisk until thick, about 3 minutes.
  • Add salt to boiling water; add pasta, and cook until al dente. Drain. Add oysters to sauce; gently poach until just cooked through, 1 to 2 minutes. Add pasta; toss. Divide among plates. Top with chorizo; sprinkle with orange zest.

FRESH ANGEL-HAIR PASTA WITH BACON AND PEAS

Fresh Angel-Hair Pasta with Bacon and Peas image

Inspired by pasta alla carbonara, this dish features bacon instead of pancetta, while shallots and peas give the sauce texture.

Time 20m

Number Of Ingredients 6

Coarse salt and ground pepper
4 slices bacon, sliced crosswise into 1/2-inch pieces
2 shallots, halved and thinly sliced
1 box (10 ounces) frozen peas, thawed
1 cup half-and-half
18 ounces fresh angel-hair pasta

Steps:

  • Set a large pot of salted water to boil. In a large skillet, cook bacon over medium until crisp, 5 to 7 minutes. With a slotted spoon, transfer to a paper-towel-lined plate to drain (leave fat in skillet).
  • Add shallots to skillet; season with salt and pepper. Cook over medium, stirring occasionally, until they begin to soften, 1 to 2 minutes. Add peas and half-and-half; season with salt and pepper. Simmer until slightly thickened, about 2 minutes.
  • Cook pasta in boiling water until al dente, according to package instructions. Reserve 1/2 cup pasta water; drain pasta, and return to pot. Pour sauce over pasta; toss to combine, adding some reserved pasta water a little at a time to coat. Sprinkle with bacon, and serve immediately.

Tips:

  • Selecting the best oysters: Choose plump and tightly closed oysters without any cracks or damage. Fresh oysters should have a briny, oceanic aroma.
  • Handling raw oysters: Work with raw oysters carefully, as they can carry bacteria. Always wash your hands before and after handling raw oysters. Use a shucking knife or oyster knife to open the shells, taking care not to spill any oyster liquor.
  • Cooking the oysters: Oysters can be cooked in various ways, including steaming, grilling, baking, and frying. Be careful not to overcook oysters, as they will become tough and rubbery. Cook them just until the edges curl and the shells begin to open.
  • Pairing flavors: Oysters pair well with a variety of flavors, including bacon, garlic, butter, lemon, white wine, and herbs. Experiment with different combinations to find your favorite pairings.
  • Serving suggestions: Serve cooked oysters immediately with your desired accompaniments. Some popular options include lemon wedges, melted butter, cocktail sauce, and crackers.
