Tips:

  • Choose ripe poblano chiles: Look for chiles that are deep green in color and have smooth, unblemished skin. Avoid chiles that are wrinkled or have brown spots.
  • Roast the poblano chiles properly: Roasting the chiles brings out their smoky, slightly sweet flavor. To roast the chiles, place them on a baking sheet and broil them for 10-12 minutes, or until the skin is blackened and blistered. Once the chiles are roasted, place them in a paper bag and let them steam for 10 minutes. This will make it easier to peel the skin off.
  • Use a high-quality chicken broth: The chicken broth is a key ingredient in the sauce, so it's important to use a good quality broth. Look for a broth that is made with real chicken and has a rich flavor.
  • Don't overcook the shrimp: Shrimp cooks very quickly, so it's important to not overcook it. Cook the shrimp for just a few minutes, or until it is pink and opaque.
  • Serve the pasta immediately: This dish is best served immediately after it is made. The pasta will start to absorb the sauce and become soggy if it sits for too long.

Conclusion:

Angel hair pasta with chicken in roasted poblano chile sauce is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The roasted poblano chiles give the sauce a smoky, slightly sweet flavor, and the chicken and shrimp add protein and flavor. This dish is sure to be a hit with your family and friends.
