Provided by Betty Crocker Kitchens

Categories     Dessert

Time 2h50m

Yield 12

Number Of Ingredients 7

1 box (16 oz) Betty Crocker™ angel food cake mix
1 1/3 cups cold water
1/2 teaspoon red paste food color
1 teaspoon peppermint extract
3/4 cup powdered sugar
1 to 2 tablespoons milk
1/2 cup finely crushed soft peppermint candies

Steps:

  • Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix and cold water with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute.
  • Pour about 3 cups batter into ungreased 10-inch angel food (tube) cake pan. Into small bowl, pour about 3/4 cup batter; stir in food color and peppermint extract until blended. Carefully spoon red batter over white batter in pan. Carefully spoon remaining white batter over red batter and swirl with knife.
  • Bake 40 minutes or until top springs back when lightly touched. Immediately turn pan upside down onto heatproof funnel or bottle. Cool completely, about 2 hours. Loosen cake by running long metal spatula along edge of pan. Place serving plate upside down on pan. Turn plate and pan over; remove pan.
  • In small bowl, mix powdered sugar and 1 tablespoon milk; stir in enough remaining milk, 1 teaspoon at a time, until thin enough to drizzle. Drizzle over cake; top with crushed candies.

Tips:

  • Use fresh egg whites at room temperature for optimal volume and texture.
  • Beat the egg whites gradually, starting on low speed and increasing to high, to prevent overbeating.
  • Add the sugar in small increments while continuing to beat the egg whites to ensure it dissolves completely and doesn't weigh them down.
  • Fold in the flour mixture gently using a spatula to maintain the airiness of the batter.
  • Bake the angel food cake in an ungreased tube pan to allow it to climb and brown properly.
  • Immediately invert the baked cake upside down to cool to prevent it from sinking.
  • Allow the cake to cool completely before frosting or decorating to ensure it holds its shape.

Conclusion:

Creating the perfect angel food cake for Christmas festivities or any special occasion requires attention to detail and a few simple techniques. By following these tips and using high-quality ingredients, you can achieve a light, fluffy, and delicious cake that will impress your family and friends. Remember to start with fresh egg whites, beat them gradually, add the sugar in increments, and fold in the flour mixture gently. Bake the cake in an ungreased tube pan, invert it immediately after baking to cool, and let it cool completely before decorating. Experiment with different frosting flavors and toppings to create a truly unique and festive treat.
