4 boneless, skinless chicken breast halves
¼ cup all-purpose flour
salt and pepper to taste
1 tablespoon dried oregano
2 tablespoons olive oil
¾ cup butter
3 cups sliced portobello mushrooms
¾ cup sun-dried tomatoes
½ cup packed fresh spinach
1 cup Marsala wine

Steps:

  • Place chicken breasts between two pieces of wax paper, and pound to 1/4 inch thick with a meat mallet. Dust chicken with flour, salt , pepper and oregano.
  • In a skillet, fry chicken in olive oil over medium heat. Cook until done, turning to cook evenly. Set aside, and keep warm.
  • In the same pan, melt the butter over medium heat; add mushrooms, sun-dried tomatoes, and Marsala wine. Cook for approximately 10 minutes, stirring occasionally. Mix in spinach, and cook for about 2 minutes. Serve over chicken.

1 lb sea scallops, patted dry
1/8 teaspoon pepper
1/4 teaspoon salt
1 large shallot, minced
1/4 cup white wine
7 teaspoons oil
1/2 cup chicken broth
3 tablespoons butter, softened
1 (6 ounce) package fresh spinach (baby works the best)
1 pint cherry tomatoes (cut in half)
1/4 cup fresh parsley (chopped)
1 1/4 teaspoons lemons, zest of (grated)
8 ounces spaghetti or 8 ounces linguine (cooked)

Steps:

  • Sprinkle scallops with salt and pepper.
  • Heat 2 tbsp oil in skillet; add scallops and cook about 2 minutes each side, until browned; remove from skillet and keep warm.
  • In same skillet, heat remaining oil and add shallot and cook until softened; about 1 minute; stir in wine and cook until reduced by half; about 30 seconds.
  • Add broth, simmer.
  • Stir in butter and pasta and toss until heated thru.

1 cup sour cream
2 cups heavy cream
4 tablespoons grated Parmesan cheese
1/2 medium-large onion, minced
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1 (10-ounce) package chopped spinach, thawed and drained
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded sharp cheddar cheese
4 ounces angel hair pasta, cooked, drained

Steps:

  • Combine egg, sour cream, heavy cream, Parmesan, onion, salt, and pepper. Add spinach and blend well. Add cheeses and mix well. Fold in pasta. Put in oven-proof casserole, sprinkle with more Parmesan, cover with tin foil, and bake at 350° for 45 minutes to 1 hour or more, until set. Remove tin foil last 10 minutes of cooking.

1 shallot, minced
4 garlic cloves, minced
1/4 cup white wine
1/2 cup chicken broth
3 tablespoons butter, softened
2 tablespoons capers
16 ounces whole wheat angel hair pasta, cooked
10 ounces Baby Spinach, fresh
1 pint cherry tomatoes, halved
1/4 cup parsley, fresh, chopped
1 1/4 teaspoons lemon zest, grated

Steps:

  • Sprinkle scallops with salt & pepper. In pan, heat 2 Tbsp oil over med-high heat. Add scallops; cook until browned, several minutes per side. Remove from pan, keep warm.
  • In pan heat remaining oil. Add shallot; cook until soft, about a minute or so. Stir in wine; cook until reduced by half, about a minute or less.
  • Add broth; simmer. Reduce heat to medium; stir in butter. Add capers, cooked pasta and the remaining salt; toss.
  • Add final four ingredients; toss until spinach wilts slightly; about 2 minutes. Transfer to platter; add scallops.

50g salted butter
50g light muscovado sugar
50g golden syrup
50g plain flour
50g glacé cherries, chopped
75g flaked almonds
50g pistachios, chopped
2 oranges, zested
175g dark chocolate

Steps:

  • Heat oven to 180C/160C/gas 4. Line two baking sheets with baking parchment.Melt the butter, sugar and golden syrup in a small saucepan over a low heat, stirring frequently. Remove from the heat and whisk in the flour then add the cherries, flaked almonds, pistachios and orange zest.
  • Scoop 10 flat tbsp of the mixture onto the baking sheets, leaving room for them to spread. You will need to do these in batches. Bake for 10 mins until golden. Leave to cool for 2 mins until firm enough to lift onto a wire rack. Cool completely. Repeat with the remaining mixture.
  • Melt the chocolate in a bowl over a simmering saucepan of water or in the microwave in 30 second bursts. Turn the florentines over on the wire rack. Spoon chocolate onto the base of each florentine and gently spread to the edges. When the chocolate is firm enough to hold its shape, use a fork to draw wavy lines across the chocolate. Leave to set and then store in an airtight container.

2 small zucchini, sliced
1 tomatoes, seeded and chopped
2 large mushrooms, sliced
1 green onion, sliced
4 cloves garlic, minced
2 tablespoons black olives, chopped
1/4 teaspoon dried basil, crumbled
1/8 teaspoon dried oregano, crumbled
4 eggs
1 1/2 cups romano cheese, grated
6 ounces angel hair pasta, freshly cooked
romano cheese, grated
2 tomatoes, chopped

Steps:

  • Heat 2 tablespoons oil in heavy medium skillet over medium-high heat.
  • Add zucchini, 1 tomato, mushrooms, onion and garlic and sauté until tender, about 3 minutes.
  • Add olives and herbs.
  • Cool.
  • Preheat broiler.
  • Beat eggs and 1.5 cups cheese in large bowl.
  • Season with salt and pepper.

I have been making this recipe for my husband's birthday dinner for the last 15 years. This recipe truly stands on it's own merit and I don't recommend any changes. I originally got this recipe from a cookbook but have modified it over the years to make it simpler.

10 ounces frozen spinach
5 tablespoons butter (divided)
1 (15 ounce) can tomato sauce
2 garlic cloves, minced
1/4 cup dry white wine
1/4 cup water
1 tablespoon tomato paste
1/2 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
4 -6 veal cutlets
1 tablespoon olive oil
4 -6 slices mozzarella cheese

Steps:

  • Cook spinach according to package directions.
  • Drain well and toss with 1 tablespoon of butter; set aside.
  • Heat 2 tablespoons butter in medium sauce pan over medium heat.
  • Add minced garlic and cook for 30 seconds.
  • Add tomato sauce, wine, water, tomato paste, sugar, 1/2 tsp of the salt and 1/8 tsp of the pepper.
  • Bring to a boil then reduce heat to medium-low.
  • Simmer uncovered for 10 minutes, stirring occasionally.
  • Remove from heat and set aside.
  • Mix flour and remaining salt and pepper in a large zip-top bag.
  • Pound veal until 1/4 inch thick.
  • Shake one piece of veal at a time in seasoned flour in bag to coat evenly.
  • Heat oil and 2 tablespoons of butter in large skillet over medium heat.
  • Add veal to skillet; cook turning over once until light brown, 2 to 3 minutes per side.
  • Remove from heat.
  • Top veal with evenly with reserved spinach, (a couple of tablespoons on each -- you won't use it all).
  • Top each with a slice of cheese.
  • Add sauce to skillet; do not let sauce cover cheese.
  • Lift edges of veal to allow sauce to flow under.
  • Heat at medium high heat, until sauce is bubbly.
  • Reduce heat to medium low.
  • Simmer covered 8 minutes.
  • Serve immediately.
  • (I serve this over cooked angel hair pasta).

½ cup whipping cream
3 tablespoons white sugar
¼ pound chopped candied orange peel
½ cup all-purpose flour, plus more for dusting
⅓ cup slivered almonds
4 ounces semisweet chocolate, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease baking sheets with shortening and dust with flour.

20 ounces spinach, frozen chopped
1/2 cup onion, chopped
1/2 cup parmesan cheese, grated
8 tablespoons butter, soft
2 eggs, beaten
4 ounces pimientos, chopped (optional)
3 cups mushrooms, fresh sliced
32 ounces spaghetti sauce (calls for meatless, use what you like or have)

Steps:

  • Preheat oven to 375°F.
  • Break pasta into thirds and cook.
  • Cook spinach, drain and add onion.
  • Add cheese, eggs, pimento (if using) and half the butter to the spinach.
