ANGEL DUST CAJUN SEASONING

Angel Dust Cajun Seasoning image

Woodall's Camp Cooking, Jimmy Bannos. This is the basic recipe, I increase proportions to equal one cup. Hot Pimenton could be subbed for the Hungarian paprika to increase the heat. It would also contribute a light, smoky flavor. Pimenton Dulce, or sweet pimenton, would work in place of the spanish paprika, too.

Provided by Martha Stewart

Categories     Gluten-Free Recipes

Yield Makes 1 1/4 cups (enough to season 5 to 10 pounds of meat, poultry, or seafood)

Number Of Ingredients 18

1/3 cup coarse salt
1/4 cup packed light-brown sugar
1/4 cup paprika
2 tablespoons ground black pepper
2 tablespoons dried oregano
2 tablespoons dried thyme leaves
1 tablespoon cayenne pepper (optional)
Cumin
Coriander
Chili Powder
Turmeric
Curry powder
Ground ginger
Cardamom
Dried tarragon
Marjoram
Rosemary
Dill or basil

Steps:

  • In a small bowl, combine all the ingredients, using your hands to break up the sugar.
  • Replace some of the paprika with cumin, coriander and chili powder.
  • Replace some of the oregano and thyme with turmeric, curry powder, ground ginger, and cardamom.
  • Replace some or all the oregano and/or thyme with dried tarragon, marjoram, and rosemary, dill, or basil. Omit the cayenne pepper.

Tips:

  • Use Fresh Ingredients: Always use fresh spices and herbs for the best flavor. Freshly ground cumin, chili powder, and paprika make a big difference in the overall taste of the spice mix.
  • Adjust the Heat Level: The amount of cayenne pepper you add will determine the heat level of the spice mix. If you prefer a milder spice mix, reduce the amount of cayenne pepper. For a spicier mix, increase the amount.
  • Toast the Spices: Toasting the spices before grinding them enhances their flavor and aroma. Heat a small skillet over medium heat and add the spices. Toast for a few minutes, stirring constantly, until fragrant.
  • Store Properly: Store the spice mix in an airtight container in a cool, dry place. It will keep for up to 6 months.
  • Experiment: Feel free to experiment with different spices and ratios to create your own unique spice mix. You can add garlic powder, onion powder, or smoked paprika to add depth of flavor.

Conclusion:

Angel Dust is a delicious and versatile spice mix that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own taste preferences. With its bold and zesty flavor, Angel Dust is sure to become a staple in your spice cabinet.
