1/2 lb andouille sausages, sliced or 1/2 lb andouille sausage, cubed
1 cup basmati rice, rinsed 3 times in cold water
2 cups water

Steps:

  • Slice sausage into 1/4 to 1/2 inch slices.
  • Or dice into 1/2 inch dice.
  • Place in a ten inch skillet with lid.
  • Add 1/2 cup water.
  • Steam on medium heat for 15 minutes, covered.
  • Remove lid and brown sausage until water is gone.
  • Add rice and brown quickly.
  • Add remaining water and bring to a boil.
  • Boil until bubbles are no longer breaking the surface of the rice.

One 13.5-ounce andouille rope sausage
1 teaspoon olive oil
1 small onion, diced
2 teaspoons minced garlic
3 mini sweet peppers, seeded and diced
1 yellow squash, sliced into half-moons
1 zucchini, sliced into half-moons
Salt and pepper to taste
1 1/2 cups white rice
4 1/2 cups vegetable stock
1/2 teaspoon saffron threads
1 tomato, diced
1 tablespoon minced fresh parsley

Steps:

  • Slice the andouille sausage into thin coins on the bias.
