Time 3h10m

Yield Approximately 5 cups

Number Of Ingredients 10

Two 15-ounce cans diced tomatoes
One 10- or 15-ounce can diced tomatoes with green chiles
1/4 cup fresh lime juice
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground black pepper
1 to 3 (depending on your heat tolerance) chipotle peppers in adobo (see Cook's Note)
1 bunch fresh cilantro, stems roughly removed
1 medium onion, diced

Steps:

  • Add the diced tomatoes, diced tomatoes with green chiles, lime juice, cumin, salt, sugar, black pepper, chipotle peppers, cilantro and onions to a food processor and blend until totally combined. Give it a taste to check for seasoning.
  • Make the salsa several hours before serving, as it will give the flavors a chance to dance! Keeps in the fridge, covered, for about a week.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your salsa will be. Look for tomatoes that are deep red in color and have no blemishes.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and gives them a smoky, caramelized taste. If you have time, roast your tomatoes for 30-45 minutes before making the salsa.
  • Use a variety of peppers: Ancho and chipotle peppers are the stars of this salsa, but you can also add other peppers to taste, such as jalapeños, serranos, or habaneros. Just be sure to adjust the amount of heat to your liking.
  • Don't overcook the peppers: Overcooking the peppers will make them bitter. Sauté them over medium heat for just a few minutes, until they are softened and fragrant.
  • Use fresh herbs: Fresh herbs, such as cilantro, parsley, and oregano, brighten up the flavors of the salsa. Add them just before serving for the best flavor.
  • Serve with your favorite dishes: Ancho chipotle salsa is a versatile condiment that can be served with a variety of dishes, such as tacos, burritos, enchiladas, and nachos. It can also be used as a dip for tortilla chips or vegetables.

Conclusion:

Ancho chipotle salsa is a delicious and versatile condiment that is easy to make at home. With its smoky, spicy, and slightly sweet flavor, it is a perfect addition to any Mexican or Tex-Mex dish. So next time you are looking for a new salsa to try, give this ancho chipotle salsa a try. You won't be disappointed!
