Categories     Chicken     Appetizer     Hot Pepper     Summer     Grill/Barbecue     Bon Appétit     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 10

Number Of Ingredients 12

1 1/4 cups apple cider vinegar
3/4 cup ketchup
3/4 cup chopped onion
3/4 cup dried tart cherries
1/3 cup (packed) dark brown sugar
1/4 cup water
3 tablespoons mild-flavored (light) molasses
2 large dried ancho chilies (about 1 ounce), stemmed, seeded
2 garlic cloves
1 teaspoon ground coriander
Pinch of ground cloves
3 pounds chicken wing drummettes

Steps:

  • Combine all ingredients except chicken in heavy medium saucepan. Bring to boil. Reduce heat to medium-low. Cover; simmer until chilies and cherries are tender, about 20 minutes. Working in batches, purée mixture in blender. Return sauce to pan. If necessary, simmer uncovered until sauce is reduced to 3 cups and thickens. Season with salt and pepper. (Can be made 3 days ahead. Cover and chill.)
  • Prepare barbecue (medium heat). Sprinkle chicken with salt and pepper. Grill until just cooked through, turning occasionally, about 10 minutes. Brush sauce over; continue grilling until glazed, turning chicken and basting often with more sauce, about 5 minutes longer. Serve with remaining sauce.

Tips:

  • Choose the Right Ancho Chiles: Select large, dried ancho chiles with a deep red color and no blemishes.
  • Soak the Chiles Properly: Before using, soak the ancho chiles in hot water for at least 30 minutes, or until softened. This rehydrates them and enhances their flavor.
  • Use a Variety of Peppers: Don't limit yourself to ancho chiles. Experiment with different types of peppers, such as chipotle, guajillo, and habanero, to create a unique flavor profile.
  • Roast the Peppers for Depth of Flavor: Roasting the peppers before using adds a smoky, rich flavor to the sauce. You can roast them in a skillet or directly over an open flame.
  • Add Sweetness with Fruits: Sweet fruits like pineapple, mango, and peaches can balance the heat of the peppers and create a more complex flavor profile.
  • Use Fresh Ingredients: Whenever possible, use fresh ingredients like garlic, onion, and tomatoes. They add more flavor and nutrients to the sauce.
  • Experiment with Different Spices: Feel free to add spices like cumin, coriander, and smoked paprika to enhance the flavor of the sauce. Start with small amounts and adjust to your preference.

Conclusion:

With its perfect balance of heat, smokiness, and sweetness, this ancho chile BBQ sauce is a versatile condiment that can elevate any grilled or roasted dish. Whether you're a BBQ enthusiast or simply looking for a flavorful sauce to add to your culinary repertoire, this recipe is sure to impress. So fire up your grill, gather your ingredients, and experience the tantalizing taste of ancho chile BBQ sauce!
