ANASAZI & PINTO BEANS WITH HOMINY & GREEN CHILES

Anasazi & Pinto Beans with Hominy & Green Chiles image

Make and share this Anasazi & Pinto Beans with Hominy & Green Chiles recipe from Food.com.

Provided by Iowahorse

Categories     Beans

Time P1DT3h

Yield 3-4 serving(s)

Number Of Ingredients 6

1 1/2 cups dried anasazi beans
1 1/2 cups dried pinto beans
10 cups water
1 teaspoon salt
3 cups dried hominy
3 green anaheim chilies, for garnish

Steps:

  • Soak the beans overnight in water to cover.
  • In the morning rinse the beans with cold water and place in a large pot with fresh water to cover.
  • Stir in the salt, cover and simmer slowly 2 to 2 1/2 hours, until the beans are tender.
  • Add water when necessary and stir occasionally to prevent the beans from burning.
  • Add hominy and simmer, covered, 1 hour, stirring occasionally.
  • The hominy and beans should be very soft and moist, but not too watery.
  • While the beans and hominy are cooking, roast, peel, seed and dice the chiles.
  • Sprinkle on top of the cooked beans for garnish.

Tips:

  • When choosing dried beans, opt for high-quality varieties that are free from blemishes and impurities. Look for beans that have a uniform size and color.
  • Before cooking, sort the beans to remove any stones, dirt, or damaged beans. Rinse the beans thoroughly under running water.
  • Soaking the beans overnight or for at least 8 hours helps reduce cooking time and improves the digestibility of the beans. If you're short on time, you can quick-soak the beans by boiling them for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Use a large pot or Dutch oven to cook the beans, as they will expand during cooking. Add enough water to cover the beans by at least 2 inches.
  • Bring the beans to a boil, then reduce the heat to low and simmer until tender. The cooking time will vary depending on the type of bean. Check the beans periodically and add more water if necessary.
  • Season the beans with salt, pepper, and other spices to taste. You can also add vegetables, such as onions, garlic, carrots, or celery, to the pot for added flavor.
  • Once the beans are cooked, remove them from the heat and let them cool slightly. Drain the beans and serve them as a side dish or use them in salads, soups, stews, or other recipes.

Conclusion:

Anasazi beans are a versatile and nutritious ingredient that can be used in a variety of dishes. They are a good source of protein, fiber, and essential vitamins and minerals. With their unique flavor and texture, Anasazi beans are a great addition to any meal. Whether you're looking for a simple side dish or a hearty main course, Anasazi beans are sure to please.
