  • Dice potatoes into a lg bowl (I don't peel them).
  • Add onion.
  • Mix all remaining ingredients in sm bowl.
  • Pour over the potatoes and mix well.
  • Best if refrigerated for 1-2 hours.

Tips:

  • Boil Potatoes Until Tender: Cook red potatoes until they are easily pierced with a fork, but not so long that they become mushy. This will ensure that they retain their shape and texture in the salad.
  • Use Fresh Herbs: Fresh herbs like parsley, dill, and chives add a burst of flavor to the potato salad. If you don't have fresh herbs on hand, you can substitute dried herbs, but use less since they are more concentrated.
  • Add Mustard for Tang: Dijon mustard adds a tangy, savory flavor to the dressing. If you don't like Dijon mustard, you can use yellow mustard or even horseradish.
  • Season to Taste: Always taste the potato salad before serving and adjust the seasonings as needed. Add more salt, pepper, mustard, or herbs until it reaches your desired flavor profile.
  • Chill Before Serving: Potato salad is best served chilled. This allows the flavors to meld and the salad to firm up a bit. Chill the salad for at least 30 minutes before serving.
