2 large Eggs
1 cup evaporated milk
1 cup Panko bread crumbs
1/4 teaspoon ground black pepper
1 tablespoon dry seasoning blend
2 pounds Ham (ground, fully cooked)
1/4 cup diced sweet onion (**Optional)
1/3 cup Packed brown sugar
1/4 cup apple cider vinegar
1/2 teaspoon ground dry mustard
1/2 cup crushed pineapple
2 tablespoons Water

Steps:

  • Preheat oven to 350 degrees F.
  • Place ham in food processor and grind for approximately one minute (or use a meat grinder). Put the ground meat in a large mixing bowl.
  • Lightly beat the eggs in a small bowl. Then in the large bowl combine eggs, bread crumbs, milk, pepper and dry seasoning blend with the ground ham and mix well.
  • Shape the ham loaf mixture into a roughly 8 x 4" oval and place into a shallow baking dish or loaf pan.
  • Bake the large loaf uncovered for 25 minutes.
  • Combine glaze ingredients and spoon glaze over loaf.
  • Place loaf back into oven and bake for an additional 35 minutes, basting occasionally with the glaze.
  • Remove loaf from the oven and allow to cool a bit before putting on serving platter and slicing.

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

2 tablespoons butter, melted
1/4 cup packed dark brown sugar
1 (20 ounce) can crushed pineapple
3 large eggs
6 cups coarsely ground cooked ham (do in food processor)
1 1/2 cups dry breadcrumbs
1/2 cup chopped parsley
1/3 cup chopped onion
1 1/2 teaspoons ground mustard
1 1/2 teaspoons ground ginger
1 1/2 teaspoons curry powder
1/4 teaspoon black pepper

Steps:

  • Drain pineapple, reserve the juice.
  • Preheat oven to 375*.
  • In a small bowl, mix together butter, brown sugar, and drained pineapple.
  • Coat a 10x10" baking pan with vegetable spray, pour in the pineapple and pat it out smoothly on the bottom of the pan.
  • In a large mixing bowl, beat the eggs with a fork.
  • Stir in the ham, pineapple juice, bread crumbs, parsley, onions, mustard, ginger, curry powder and pepper.mix well.
  • Spread the ham mixture over the pineapple, patting it firmly over the pineapple.
  • Bake for 45 minutes.
  • Remove from the oven and allow to stand for 10 minutes.
  • To serve, invert onto a serving platter.
  • If any of the pineapple mixture remains in the bottom of pan, pat it on the loaf and serve immediately.

canned pineapple slices
stemless maraschino cherries (optional)
1 lb (4 cups) ground cooked ham
2/3 lb freshly ground raw pork
2 c bread crumbs
2 large eggs,beaten
1 c milk
1 tsp salt
1/8 tsp pepper
1/2 tsp dry mustard

Steps:

  • 1. Melt butter with brown sugar and place in bottom of 8"x8"x2" pan.
  • 2. Place layer of pineapple slices (with a stemless cherry in the middle of each if desired)on top of sugar mixture.
  • 3. Mix together remaining ingredients,and spread evenly on top of fruit.

1-1/2 pound ground fully cooked ham

2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. 1 cup shredded Swiss cheese
