Very good recipe! I never had mashed turnips before, but I loved them. Servings are approximate. I can't really remember how many servings I got out of it.

2 cups cooked turnips
2/3 cup breadcrumbs
1 tablespoon oleo or 1 tablespoon margarine
2 tablespoons brown sugar
1 cup milk
1 egg
salt and pepper

Steps:

  • Cook turnips until tender.
  • Drain, mash and then add 1/2 cup bread crumbs, saving rest for top.
  • Add egg, sugar, milk, salt and pepper to taste.
  • Mix together; pour into greased baking dish.
  • Dot with butter and rest of crumbs.

2 tbsp white vinegar
2 tsp table salt
3 tbsp butter (divided use)
2 tbsp cream
1 egg
2/3 cup bread crumbs*
Sweetener equal to 2 tsp of sugar

Steps:

  • Trim and peel turnips. Cut into chunks. Bring a 2 quart pan of water to boil. Add 2 tsp table salt and 2 tbsp white vinegar. Add turnips and boil until soft. Drain water. Mash turnips with 2 tbsp butter, cream and egg. Stir in 1/4 cup of the bread crumbs, sweetener and salt. Spoon into a casserole dish. Dot with remaining butter and sprinkle bread crumbs over the top. 3 slices thick cut bacon, cut crosswise
1 small onion, chopped
2 garlic cloves, chopped
1/4 cup, plus 2 T dry white wine
12 oz. low-fat cream cheese (Neufchatel), cut into chunks
4 oz. low-fat sour cream
1/2 tsp. red pepper flakes
1/2 tsp. salt
1/4 tsp. ground black pepper
3/4 cup grated Parmesan cheese
Assorted crackers and tortilla chips

Steps:

  • Cook the turnip greens according to package directions, omitting salt. Drain well and set aside. Preheat the oven to broil. Cook the bacon in a large, deep pan or Dutch oven over medium heat for 5 to 6 minutes or until crisp. Remove the bacon to a paper-towel lined plate to drain. Discard all but one tablespoon of the bacon drippings, leaving it in the pan. To the hot drippings, add the onion and garlic and sauté for about 4 minutes or until onions begin to appear translucent. Add the wine and cook an additional 2 minutes while stirring to loosen any particles from the bottom of the pan. Stir in the cooked, well-drained turnip greens, cream cheese, sour cream, red pepper flakes, salt, ground pepper and ½ cup of the Parmesan cheese. 1 (10 oz) can Rotel tomatoes with green chilies, undrained
1 (14.5 oz) can Hunt's petite-diced tomatoes, undrained
1 (16 oz) can navy beans, rinsed and drained
1 (15 1/2 oz) can black-eyed peas, rinsed and drained
1 (15 oz) can pinto or kidney beans, rinsed and drained (I used pintos)
1/8 - 1/4 teaspoon garlic salt, or to taste
1/4 - 1/2 teaspoon Creole seasoning, or to taste (such as Tony Chachere's)

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch casserole dish.
