AMISH BROWN SUGAR PIE

Amish Brown Sugar Pie image

This is an old Amish recipe, also called "Tears on Your Pillow Pie," that I have made for years. I have adapted the recipe as the original was for a fire-powered oven. It's one of my most requested pies. Store in refrigerator but for best taste allow to reach room temperature before serving.

Tips:

  • Using a food processor or grater, finely grate the frozen butter into the flour mixture. This will create a flaky, tender crust.
  • When adding the milk, start with a small amount and add more as needed until the dough just comes together. Over-mixing the dough will make it tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will make it easier to work with and prevent it from shrinking in the oven.
  • Brush the edges of the bottom crust with egg wash before adding the filling. This will help to seal the crust and prevent it from becoming soggy.
  • Bake the pie in a preheated oven. This will help to ensure that the crust bakes evenly.
  • Allow the pie to cool completely before serving. This will give the filling time to set.

Amish Tears on Your Pillow Pie is a delicious and easy-to-make dessert. The flaky crust and creamy filling are sure to please everyone at your table. With a few simple tips, you can make this pie perfect every time. So next time you're looking for a special treat, give this recipe a try. You won't be disappointed!
