3 large eggs hard-cooked eggs, chopped
1 small onion, chopped
3 stalks celery, chopped

  • COOK POTATOES Bring potatoes, 1 tablespoon salt, and enough water to cover by 1 inch to boil in large pot over high heat. Reduce heat to medium and simmer until potatoes are just tender, about 10 minutes.
  • PREPARE DRESSING While potatoes simmer, microwave vinegar and sugar in small bowl until sugar dissolves, about 30 seconds. Process vinegar mixture, mustard, 1 hard-cooked egg yolk (reserve white), celery seed, and ½ teaspoon salt in food processor until smooth. Transfer to medium bowl.
  • SEASON POTATOES Drain potatoes thoroughly, then transfer to large bowl. Drizzle 2 tablespoons dressing over hot potatoes and, using rubber spatula, gently toss until evenly coated. Refrigerate until cooled, at least 30 -minutes, stirring gently once to redistribute dressing.
  • ASSEMBLE Whisk sour cream into remaining dressing. Add remaining hard-cooked eggs and egg white to dressing and, using potato masher, mash until only small pieces remain. 1 lb salad macaroni
4 hard-boiled eggs (chopped)
1 small onion, finely diced
3 celery ribs, diced small
1 small sweet pepper, seeded and diced small (red or orange)
2 cups light mayonnaise (do not use Miracle Whip)
1/2 cup sugar
1/8 cup yellow mustard
2 tablespoons dill pickle relish (mine had tabasco in it for a kick)
1 tablespoon white vinegar or 1 tablespoon apple cider vinegar
3/4 teaspoon celery seed
1/4 teaspoon salt

  • Cook the macaroni according to directions, drain well.
  • While pasta is cooking mix up all the dressing ingredients till well blended and set aside.
  • Chop up all the veggies.
  • When macaroni has cooled and drained well mix in the dressing (add all of it if you like very creamy salad.if you don't like a lot of dressing leave out about 1/2-3/4 c of the dressing. Remember that as it sets it will soak up some of the dressing.
  • Refrigerate for at least one hour, the longer you let it set the better the flavor. Overnight is not to long! Servings are approximately Does not include cook time or the chill time.

1 lb chopped ham, strips or small cubes
3/4 lb baby swiss, finely shredded (i like horseradish cheese too)
1 1/2 - 2 c sauerkraut, rinsed and drained
1 Tbsp dill weed
2 - 3 tsp caraway seeds
2 - 4 Tbsp horseradish sauce (depending on taste)
1/3 - 1/2 c mayonnaise dressing
salt & pepper to taste

Steps:

  • 1. Shredding the baby swiss cheese, chop the ham and rinse/drain the sauerkraut really well. I usually squeeze the kraut with my hands to get the most liquid out as possible.
  • 2. Add all your ingredients in a bowl and stir together till well combined.

Why only "kinda" Amish? Good question - shows you're paying attention. While the recipe from which this was adapted proudly proclaimed to be Amish Macaroni Salad, I found it to be much too sweet and not eggy enough for our tastes. After playing a bit with proportions and trying different types of vinegar and mustard, this is what resulted -- and although it's only Kinda Amish, it is, indeed, Very Deelish. You may save one hard cooked egg and slice it to arrange on the top, then sprinkle with paprika. Or you can just put all of the eggs in the salad and mix in some paprika too, and garnish with a few little tufts of fresh parsley. Or, for the presentationally-impaired like myself, just use all the eggs right in the salad, and forget the paprika and parsley. Parsley's always a little bit suspicious in my book anyway - once I got some parsley from a salad bar and it was plastic. Yeah, it was part of the decoration, but you know, they could warn people. "Attention Restaurant Patrons: Salad Bar Decorations Are Non-Edible. Everything Else Is Okay To Eat. No, Really. We Mean It." Oh, by the way, you'll want to prepare this a day ahead, and chill overnight in a padlocked refrigerator. Otherwise, it'll vanish long before you planned to serve it.

6 medium white potatoes with skin
1 small onion, finely chopped
1 c celery, chopped
1 c carrots, chopped
1 tsp celery seed
4 hard-cooked eggs, peeled and chopped

1/3 c apple cider vinegar
1/2 c milk

  • 1. The best way to boil potatoes is to start out by covering them with cold water in a large pot, then bring it to a boil. Cook them for approximately 20 minutes, or until fork tender. Drain and let them cool.
  • 2. While the potatoes are cooking, you can put the eggs, sugar, cornstarch, and salt into a pan and whisk it all together. Then, stir in the vinegar, milk, and mustard. Cook this mixture over medium heat, while stirring. You want it to thicken. Do this for approx.10 minutes. Then take the pot off the heating element and stir in that butter. Put it in the fridge until it's cooled down. Once it's cooled, you can stir in the mayonnaise.
  • 3. Peel the cooled potatoes (you can leave them unpeeled if you prefer your potato salad more rustic). Cut the potatoes into roughly medium-sized pieces and then put them into a big bowl. Give them a good, but gentle, toss as you add the onion, celery, carrots, celery seed and hard-cooked eggs.
  • 4. Last, you can gently fold in your prepared dressing. Refrigerate. Relax. You're done! It tastes the best after a day of chilling because the flavors really get a chance to meld together for max enjoyment.

COOKED DRESSING
1/4 c flour
2 Tbsp sugar
1 tsp salt

1 1/2 c milk

1 Tbsp butter

  • 1. Peel and shred carrots. Toss with raisins and salt. Set aside.
  • 2. In a saucepan mix the flour, sugar, salt and dry mustard. Stir milk in gradually, whisking to mix. Bring to a boil and boil 1 minute. Slowly add 1/4 of the liquid into the eggs while stirring to temper the eggs so they don't cook when added to the hot liquid. Now add the egg yolks in a slow steady stream while stirring liquid. 6 medium white potatoes
1 small onion, finely chopped
1 cup celery, chopped
1 cup carrot, chopped (or shredded)
1 teaspoon celery seed
2 hard-boiled eggs
2 eggs, beaten
1/2 cup white sugar
1 teaspoon cornstarch
1/4 cup apple cider vinegar
1/2 cup milk
1 teaspoon yellow mustard
3 tablespoons butter
1 cup mayonnaise

Steps:

  • Cut the potatoes into big chucks and boil until tender with a fork. Drain and set aside.
  • In a large sauce pan over low heat whisk together the ingredients for the dressing. Continue untill thickens and chill for about 2 hours.
  • In a large mixing bowl or container toss together the salad ingreidents and then carefully mix in the chilled dressing. Serve chilled.

6 medium white potatoes with skin
1 small onion, finely chopped
1 cup chopped celery
1 cup chopped carrots
1 teaspoon celery seed
4 hard-cooked eggs, peeled and chopped
2 eggs, beaten
¾ cup white sugar
1 teaspoon cornstarch
½ teaspoon salt
⅓ cup apple cider vinegar
½ cup milk
1 teaspoon prepared yellow mustard
3 tablespoons butter
1 cup mayonnaise or salad dressing

Steps:

  • Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
  • Peel the potatoes if desired, and cut into medium dice. Place in a large bowl, and toss with the onion, celery, carrots, celery seed and hard-cooked eggs. Gently fold in the dressing. Refrigerate until serving. I personally like this to sit for at least a day before serving to let the flavors blend, but you may serve it as soon as it is chilled.
