1 14 oz. can(s) of good quality peas
1 c cubed, mild longhorn or cheddar cheese
1 c salted peanuts
1/3 c chopped celery
1/4 c chopped onion
1/4 c chopped sweet pickle pieces (not relish)
1/4 c chopped fresh parsley
2 Tbsp chopped green bell pepper
1 Tbsp chopped red bell pepper, or canned red pimento
1 hard-cooked egg, coarsly chopped
4 Tbsp (heaping) creamy salad dressing (such as miracle whip)
1 tsp lemon juice
1 tsp prepared mustard
1 tsp celery seed

Steps:

  • 1. Combine all the ingredients in the order given in a large bowl and mix lightly.
  • 2. Chill for several hours (about 3 is good) in a tightly covered container to allow all of the flavors to meld (see my notes).

1/2 cup diced cheddar cheese
1/2 cup diced mozzarella cheese
1 medium onion, chopped
1 cup Miracle Whip
