Time 2h30m

Yield 24

Number Of Ingredients 11

1 (.25 ounce) package rapid rise yeast
1 teaspoon white sugar
½ cup warm water (110 degrees F/45 degrees C)
1 (12 fluid ounce) can evaporated milk
¼ cup water
¼ cup melted shortening
¼ cup honey
2 teaspoons salt
2 cups whole wheat flour
3 cups bread flour
2 tablespoons butter

Steps:

  • Dissolve yeast and sugar in 1/2 cup warm water.
  • Combine milk, 1/4 cup water, shortening, honey, salt and wheat flour in food processor or bowl. Mix in yeast mixture, and let rest 15 minutes. Add bread flour, and process until dough forms a ball. Knead dough by processing an additional 80 seconds in food processor, or mix and knead by hand 10 minutes. Place the dough in a buttered bowl, and turn to coat. Cover the bowl with plastic wrap. Let dough rise for 45 minutes, or until almost doubled.
  • Punch down, and divide dough in half. Roll out each half, and pound out the bubbles. Form into loaves, and place in buttered 9x5 inch bread pans. Butter the tops of the dough, and cover loosely with plastic wrap. Let rise in a warm area until doubled; second rise should take about 30 minutes.
  • Place a small pan of water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 25 to 35 minutes, or until tops are dark golden brown. Butter crusts while warm. Slice when cool.

AMISH SOFT HONEY WHOLE WHEAT BREAD

Amish Soft Honey Whole Wheat Bread image

I've been looking for a soft all whole wheat bread, and I finally found it! This is in an Amish cookbook that I have, and I am writing it as it is written. I mix it with my KitchenAid. :) This is our sandwich bread that we have all the time on hand and the recipe can easily be cut into 1/3 to make just one loaf. :) 10/8/07 Corrections made to make bigger loaves. I usually use recipe #185778 to have a great rise.

Time 3h30m

Yield 3 loaves, 60 serving(s)

Number Of Ingredients 9

3 cups warm water (110-115 degrees)
1 teaspoon sugar
2 tablespoons yeast
3 eggs
3/4 cup honey
3/4 cup Crisco (I use butter flavored)
2 tablespoons salt
11 -12 cups whole wheat flour
4 tablespoons wheat gluten (optional)

Steps:

  • Mix water with yeast and sugar and let sit until foamy (about 10 minutes). In the meanwhile, put the 3 eggs (in the shell) in a bowl of hot water (to bring the eggs to room temperature).
  • Put flour, salt, and gluten in bowl.
  • Pour in yeast mixture and stir until combined. Add in honey, eggs, and crisco until combined, scraping sides. (I usually use an egg beater for this).
  • Add more wheat flour and knead until smooth.
  • Let set in warm place for about an hour until double in size.
  • Divide into 3 loaves. Let rise again in warm place until doubled (about 1-1/2 hours).
  • Bake as regular bread (I bake about 35 minutes at 375 or until the interior of the bread is 190 degrees using electric thermometer if you have one).
  • Enjoy!

Tips:

  • Activate the yeast properly: To ensure the bread rises properly, make sure the water temperature is between 105-115°F (40-46°C). This will activate the yeast and allow it to work effectively.
  • Knead the dough thoroughly: Proper kneading develops the gluten in the flour, resulting in a smooth and elastic dough. Knead for at least 5-7 minutes, or until the dough becomes smooth and stretchy.
  • Let the dough rise in a warm place: Find a warm spot in your kitchen, such as near a warm oven or on top of the refrigerator, to let the dough rise. This will help the dough rise faster and achieve its full potential.
  • Don't overproof the dough: Overproofing can result in a dense and gummy bread. Allow the dough to rise until it has doubled in size, but not more than that.
  • Bake the bread at a high temperature: A high initial baking temperature will create a crispy crust and a fluffy interior. Start by baking the bread at 400°F (200°C) for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking until done.

Conclusion:

Amish Honey Wheat Bread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. With its slightly sweet flavor and soft, fluffy texture, it's sure to be a hit with your family and friends. By following these tips and using high-quality ingredients, you can create a perfect loaf of Amish Honey Wheat Bread that will impress everyone.
