Number Of Ingredients 9

3/4 cup flour
2 teaspoons baking powder
1 tablespoon sugar
3/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon plain cornmeal
3/4 cup milk
2 medium onions, finely chopped
peanut oil (for frying)

  • Combine flour, baking powder, sugar, salt, pepper and cornmeal.
  • Add milk and mix well.
  • Stir in onions.
  • Drop small mounds of batter into shallow hot oil and fry 5 minutes on each side until golden brown.

Tips:

  • For the best results, use fresh onions. This will give the patties a more flavorful and crispy texture.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter. Overmixing will make the patties tough.
  • Be sure to heat the oil to medium-high heat before frying the patties. This will help them to cook evenly and prevent them from sticking to the pan.
  • Don't overcrowd the pan when frying the patties. This will also cause them to stick together and not cook evenly.
  • Serve the patties hot with your favorite dipping sauce.
