- Do not mix until creamy.
- Reserve 1 cup to use as topping.
- Dissolve the baking soda in the hot coffee and add to the flour mixture.

- Spread in a 9"x12"x2" pan (please note that this is a thin batter) and sprinkle on the reserved topping.
- Bake at 325°F degrees for approximately 30 minutes.

Steps:
- 1. Turn oven on to 350 degrees
- 2. Can use three 9" cake or pie pans OR a 9x13 pan
- 3. In a bow mix brown sugar, flour and butter until lumpy (like strudel) DO NOT MIX UNTIL CREAMY
- 4. Take out one cup of the above mixture for topping
- 5. Add soda to hot coffee to dissolve
- 6. To the balance in bowl add the egg, vanilla, then add the HOT coffee/soda mixture - mix well
- 7. This is a thin batter - just spread it into baking pan and sprinkle on topping evenly. Put in preheated oven
- 8. Should spring up when done - about 30-35 mins
- 9. While still warm sprinkle xxxsugar aka powdered sugar on top - doesn't take a lot.
