2 eggs
2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice
4 cups flour
2 teaspoons baking soda
CINNAMON/SUGAR MIXTURE:
2/3 cups sugar
2 teaspoons cinnamon

Steps:

  • 1. Cream together butter, 2 cups of sugar, and eggs. Add milk, flour, and baking soda. Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan).
  • 2. Mix in separate bowl the 2/3 c sugar and cinnamon. Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan.

  • 4. I have also made this bread in muffin tins which made it a little easier to freeze and take out as needed.

Tips:

  • Use high-quality ingredients: Fresh, high-quality ingredients will result in a better-tasting bread. Use real butter, not margarine, and fresh eggs.
  • Measure your ingredients accurately: Baking is a science, so it's important to measure your ingredients accurately. Use a kitchen scale for the best results.
  • Don't overmix the batter: Overmixing the batter will develop the gluten in the flour, which will result in a tough bread. Mix the batter just until the ingredients are combined.
  • Let the bread cool completely before slicing: Slicing the bread while it's still warm will cause it to crumble. Let the bread cool completely on a wire rack before slicing.
  • Store the bread properly: Store the bread in an airtight container at room temperature for up to 3 days. You can also freeze the bread for up to 2 months.

Conclusion:

Amish cinnamon bread is a delicious and easy-to-make treat that is perfect for any occasion. With its sweet and spicy flavor, this bread is sure to be a hit with everyone who tries it. So next time you're looking for a special bread to bake, give Amish cinnamon bread a try. You won't be disappointed.
