This is my Amish grandmother's recipe and I've never tasted any chocolate pudding that compares to it.

- Combine milk, sugar, cocoa, and flour in a saucepan over medium-low heat, stirring constantly. Add egg yolks and turn heat up to medium-high, continuing to stir, until thick, about 15 minutes. Remove from heat and stir in vanilla extract. Serve warm or chilled.

DARK CHOCOLATE BROWNIE PUDDINGS
Ree's husband loves chocolate and her Dad loves chocolate, so this is the perfect dish for them both. It's very chocolatey, very rich and very easy.

- Coat the insides of four 6-ounce ramekins with baking spray and place them in a 9-by-13-inch casserole dish. Preheat the oven to 325 degrees F.
- Add the eggs, sugar and vanilla bean paste to a bowl. With an electric mixer, beat the mixture until light and fluffy, about 5 minutes. Sift in the cocoa and flour and fold in with a rubber spatula until just combined. Stir in the melted butter.
- Divide among the ramekins, then add hot water to the casserole dish, coming halfway up the sides of the ramekins. Bake until the edges of the puddings are set but the centers are gooey, about 40 minutes.
- Allow to cool for 10 minutes.
- Meanwhile, add the heavy cream to a bowl, then use a hand whisk to whip until light and soft peaks form.
- Serve the puddings in their ramekins with dollops of the fresh whipped cream.
AMISH CHOCOLATE ECLAIR PUDDING
Steps:
- Put one layer of crackers on bottom of 9x13 pan. Mix pudding and milk and beat for 2 minutes on low speed. Fold in Cool Whip. Pour half of pudding mixture on top of crackers.
- Put another layer of crackers on top of pudding. Pour the rest of pudding mixture on top of crackers. Put last layer of crackers on top of second pudding layer. Refrigerate until topping is ready.
- Mix 3 tablespoons milk, cocoa and butter on low heat in a small saucepan or microwave on low until butter melts. Remove from heat. Add powdered sugar and mix till smooth. Spread on top of last layer of crackers and refrigerate for several hours before serving.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
- In a large mixing bowl, stir together all-purpose flour, sugar, baking powder, baking soda, salt, chocolate pudding. Make a well in the center of this mixture. Add Amish friendship bread starter, vegetable oil, milk, eggs and vanilla extract; mix well. Pour batter into prepared loaf pans.
