SIMPLE STOVETOP AMISH CHICKEN

Simple Stovetop Amish Chicken image

In my family, we call this simple stove top recipe for chicken Chicken Pot Pie. It is not very pie like, but a very classic German/Amish dish. This is one of my very favorites, I learned to make it with my mom when I was little, this will be the first time I wrote it down! I have had it before with carrots, which I do enjoy, but I prefer it best when it is very simple. This is a very inexpensive dish.

Provided by IamPatSajak

Categories     World Cuisine Recipes     European     German

Time 1h15m

Yield 6

Number Of Ingredients 7

1 (2 pound) roasting chicken
8 cups water, or as needed
1 (28 ounce) can low fat, low sodium chicken broth
3 large baking potatoes, peeled
1 (10 ounce) package wide egg noodles
1 teaspoon salt-free seasoning blend
salt and pepper to taste

Steps:

  • Place the chicken into a large pot, and fill with enough water to cover it. Bring to a boil, cover, and cook over high heat until chicken is easily removed from the bone, about 35 minutes. Turn the chicken over once during this time so it will cook evenly. Cutting the chicken into pieces can speed up the cooking process a bit.
  • While the chicken is cooking, cut two of the potatoes into large chunks, and the other potato into very small cubes.
  • When the chicken is cooked, remove it from the water. Pull off the skin, and place all of the chicken meat in a separate dish. Pull the meat apart in long shreds. Reserve the cooking water in a separate container. Discard chicken skin and bones.
  • Pour the chicken broth into the pot, and add potatoes, chicken, salt, and pepper. Pour in 2 to 3 cups of the reserved water. Bring to a boil, and cook for about 15 minutes, until potatoes start to soften. Add 3 more cups of the chicken water, and the noodles. Season with salt-free seasoning blend, salt, and pepper. Cover, and simmer over medium-low heat until the noodles are tender and small potato pieces have dissolved.

AMISH CHICKEN & CORNBREAD STUFFING FOR THE CROCK POT OR OVEN

Amish Chicken & Cornbread Stuffing for the Crock Pot or Oven image

This is really delicious, one of my favorite crock pot recipes that can as easily be made as a casserole and baked in the oven. It lends itself easily to your favorite variations. I did not include boiling the chicken in the time since that is an option, and you can use already prepared cooked chicken, and I listed the time for oven baking, not the crock pot version. You can either cook a whole chicken in water with your favorite seasonings to make the broth, or use cooked chicken use canned broth. Works well either way. I've had it a long time and can't remember the source.

AMISH BAKED CHICKEN

Amish Baked Chicken image

my sister makes this dish for us sometimes when we all go to visit her she is a wonderful cook

Provided by Patsy Fowler

Categories     Chicken

Time 1h45m

Number Of Ingredients 7

1/2 c flour
2 Tbsp paprika
1 tsp pepper
1/4 tsp dry mustard
3 tsp salt
1 cut up broiler chicken
1/4 lb butter

Steps:

  • 1. Preheat oven to 350.
  • 2. Mix the dry ingredients well in a plastic bag, then coat the cup up chicken parts with the mixture.
  • 3. Melt the butter in a 9x13 inch baking pan. Place the chicken parts in the pan, but do not crowd them.
  • 4. Bake the chicken for 1 1/2 to 2 hours or until done.

Tips

  • Use a whole chicken for the most flavor. Amish chicken is traditionally made with a whole chicken, which gives the dish a richer flavor. If you don't have a whole chicken, you can use chicken breasts or thighs, but the flavor will be slightly less intense.
  • Marinate the chicken overnight. Marinating the chicken overnight in a mixture of buttermilk, herbs, and spices helps to tenderize the meat and infuse it with flavor. If you don't have time to marinate the chicken overnight, you can marinate it for at least 30 minutes.
  • Cook the chicken slowly. Amish chicken is cooked slowly over low heat, which helps to keep the meat moist and juicy. If you cook the chicken too quickly, it will be tough and dry.
  • Use a variety of seasonings. Amish chicken is typically seasoned with a variety of herbs and spices, such as garlic, paprika, salt, and pepper. You can also add other seasonings to your taste, such as cumin, thyme, or oregano.
  • Serve the chicken with mashed potatoes and gravy. Amish chicken is traditionally served with mashed potatoes and gravy. You can also serve it with other sides, such as roasted vegetables, rice, or salad.

Conclusion

Amish chicken is a delicious and flavorful dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you are a fan of Amish cuisine or simply looking for a new and exciting way to cook chicken, Amish chicken is sure to please. Experiment with different marinades and seasonings to find the perfect combination for your taste. Amish chicken can also be served with a variety of sides, so feel free to get creative and find the perfect pairing for your meal.
