AMISH CABBAGE & POTATO CASSEROLE

Amish Cabbage & Potato Casserole image

This recipe intrigued me because I'm drawn to Amish cooking. Although I really liked it just as written (it's tasty comfort food), I believe it has the potential to be tweaked by just the right Zaar chef to make it a winner in the inexpensive-yet-delicious category (if there is one)...So have at it, Zaar chefs!!! :)

PEPPER CABBAGE AKA AMISH SLAW-ANNETTE'S

Pepper Cabbage aka Amish Slaw-Annette's image

I love sauerkraut cooked in brown sugar. I love it sweet with just a hint of sour. This recipe is the same. Cabbage and peppers with vinegar and sugar give it that sweet and sour flavor. The cabbage gives it a slight crunch though unlike kraut. This is known as 'Amish Slaw or Pickled cabbage' as well. It goes great with anything...

Time 20m

Number Of Ingredients 8

1 head cabbage, shredded fine
1 red bell pepper, chopped fine
1 onion, chopped fine
2 c sugar
1 c white vinegar
1 tsp mustard seed, crushed
1 tsp celery seed
salt and pepper to taste

Steps:

  • 1. I have used my food processor to chop the ingredients and I have done it by hand. Either way will be work as long as you cut everything "fine".
  • 2. Combine cabbage, red bell pepper, and onion.
  • 3. Mix sugar, vinegar, mustard seed, celery seed, salt and pepper. Pour over cabbage mixture. Stir to combine.
  • 4. Chill overnight or for several days. Keeps well in refrigerator. Enjoy!

Tips:

  • Select the right cabbage: Choose a firm, heavy cabbage with tightly packed leaves. Avoid any heads with signs of bruising or wilting.
  • Use a sharp knife: A sharp knife will make it easier to thinly slice the cabbage and create even pieces.
  • Don't overcrowd the pan: When cooking the cabbage, make sure not to overcrowd the pan. This will prevent the cabbage from cooking evenly and becoming soggy.
  • Season to taste: Season the cabbage with salt, pepper, and other spices to your liking. You can also add a splash of vinegar or lemon juice for a tangy flavor.
  • Serve immediately: Amish cabbage is best served immediately after cooking. This will ensure that it retains its crispy texture and fresh flavor.

Amish cabbage is a simple but delicious side dish that can be enjoyed by people of all ages. It is a great way to use up leftover cabbage and is also a healthy and affordable option. With its simple ingredients and easy-to-follow instructions, this recipe is sure to become a staple in your kitchen.
