We've enjoyed a few hearty breakfast casseroles while visiting an Amish inn. When I asked for a recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this quick and easy breakfast casserole my family loves. -Beth Notaro, Kokomo, Indiana

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1-1/2 cups 4% cottage cheese
1-1/4 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

1 ½ cups small curd cottage cheese
1 ¼ cups shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.
  • Bake in preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand 10 minutes before cutting and serving.

1/2 lb bulk breakfast sausage
1/2 lb bacon
1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp garlic powder
1 tsp favorite hot sauce
4 c frozen shredded hash browns totally thawed
1 small onion, finely diced
1 1/2 c small curd cottage cheese
6 large eggs slightlybeaten
8 oz each shredded sharp cheddar cheese , swiss cheese

Steps:

  • 1. In a large bowl, combine hash browns, salt, black pepper, garlic powder and hot sauce. Stir gently to thoroughly combine. Stir in cottage cheese and all Cook bacon in 400degreesF oven until crisp. when crisp, carefully remove from oven and place on papper towel lined plate to cool. When cool, crumble into small pieces and set aside. While bacon is cooking, thoroughly brown sausage in a skillet. When browned, remove from skillet and place on papertowel lined [late to drain and cool. When sausage is cool, break into small pieces. While sausage cools, sauté onions and other desired additions [ diced bell peppers, diced fresh mushrooms, etc.] in the skillet with the sausage drippings. set aside to drain and cool.
  • 2. In a large bowl, combine hash browns, salt, black pepper, garlic powder and hot sauce. Stir gently to thoroughly combine. Stir in cottage cheese and all but 1/4 to 1/2 cup of the cheddar and Swiss cheeses[ save for the top.] Stir in sausage and bacon, reserving 1/4 cup each for the top. Stir in sautéed onions, any other sautéed additions, and the 6 eggs.
  • 3. Grease one 9"X13" baking dish or two smaller ones if you want one casserole to eat now and one to freeze to eat later. Spread the hash brown mixture into the greased pans and spread reserved cheeses, bacon and sausage on top. If baking your casserole now, preheat oven to 350 degrees F. Bake for 35-40 minutes until all cheese is melted and bubbling and casserole has set up in the middle. Let casserole cool for a while and then cut into individual portions. Serve warm. Leftover portions may be frozen in covered freezer containers for quite a while and reheated in microwave. If baking later, tightly cover casserole with foil and refrigerate until 30 minutes before baking.

Tips:

  • For a richer flavor, use a combination of sharp cheddar cheese and mozzarella cheese.
  • Add some diced ham, bacon, or sausage to the casserole for a protein boost.
  • To make the casserole ahead of time, assemble it the night before and refrigerate overnight. In the morning, bake it according to the recipe instructions.
