AMISH BOB AND ANDY PIE

Amish Bob And Andy Pie image

The story behind this pie is that an Amish farmer came in from working in the fields, took one bite of this delicious pie and said this pie is as good as Bob and Andy which were his two prize gelding work horses. It reminds me of a rich, spicy chess pie.

Tips:

  • Make sure your ingredients are cold. This will help the crust stay flaky and prevent the pie from shrinking.
  • Work the butter into the flour quickly. You don't want to overwork the dough, or it will become tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will make it easier to work with and less likely to tear.
  • Use a sharp knife to cut the slits in the top crust. This will help the steam escape and prevent the pie from bubbling over.
  • Bake the pie in a preheated oven. This will help the crust cook evenly.
  • Let the pie cool for at least 15 minutes before serving. This will give the filling time to set.
