I'm trying going 'paleo', which basically means, no grain, no dairy, no sugar, no salt. I made this tonight and it was a big hit.

Number Of Ingredients 10

1 lb ground elk (defrost if frozen)
1 egg
1 carrot
1 stick celery
1/2 large onion (or a whole small one)
2 garlic cloves
1 teaspoon rosemary
1/2 teaspoon black pepper
1/2 cup ketchup (the paleo version is sweetened only with fruit, and unsalted)
1 tablespoon olive oil

Steps:

  • Crack the egg, mix it up a bit, and add the elk. Stir together.
  • Cut the carrot, celery, onion, and garlic into large chunks. Put them all together in a food processor, and pulse until they are in small, even pieces. (Don't let them turn into mush!).
  • Add the cut vegetables to the meat, and the rosemary, pepper, oil, and ketchup. Mix it all up, using your hands is the best way to ensure an even mix.
  • Form into a loaf and put into a loaf pan.
  • Bake at 350 for approximately an hour.

1 onion (diced)
4 cloves garlic
1 cup quick oatmeal
1 cup milk
2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 Tablespoon mustard
2 Tablespoons Worchestershire sauce
1/4 cup ketchup
Sauce:
1 cup ketchup
2 Tablespoons apple cider vinegar (or white vinegar)
1/4 cup onion, diced
2 Tablespoons Worchestershire sauce
3 Tablespoons brown sugar

Steps:

  • Preheat oven to 350.
  • Place oatmeal, onion, garlic, milk, salt, pepper, cayenne, mustard, ketchup, worchestershire sauce, and ground elk in a large mixing bowl. Mix gently with hands or a spoon.
  • Form into a loaf and place in a greased pan. (I use a 9x13)
  • For the sauce: Mix 1 cup ketchup, 3 T brown sugar, 2 T vinegar, 2 T worchestershire, and 1/4 cup onion together. Spread over th e meatloaf and bake uncovered for 1 hour.

1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs

2 tablespoons brown sugar
2 tablespoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.

1 lb ground elk
3/4 lb ground pork
2 slices whole grain bread, crust removed, dried & cubed
1 egg
1 small onion, finely chopped
1 teaspoon kosher salt
1 tablespoon granulated garlic
1/4 teaspoon black pepper
4 tablespoons ketchup
2/3 cup whole milk
1/4 cup apple cider vinegar
1/2 cup dark brown sugar
1/2 cup ketchup

Steps:

  • Preheat oven to 350°F
  • Combine 1st ten ingredients, mix well and place into a loaf pan (lining the bottom of your loaf pan with bread slices will soak up excess fat.).
