1 large red bell pepper (deseeded and chopped )
1 medium yellow onion (peeled and diced)
3 cloves garlic (crushed)
21 oz condensed cream of chicken soup (2 - 10.5 oz cans)
1 cup milk
1 Tbsp soy sauce
1/4 tsp black pepper
4 cups chicken (cooked and chopped)
3 cup cooked rice (1 cup of uncooked rice will equal 3 cups cooked rice.)
2 1/2 cups chow mein noodles

Steps:

  • Preheat the oven to 375F. Lightly spray the inside of a 9 by 13-inch casserole dish with cooking spray.
  • Add the butter to a large, deep skillet over medium heat. Once melted, add the celery, carrot, red bell pepper, and onion, and turn the heat up to high. Cook, stirring constantly until the vegetables are starting to soften, about 3 to 5 minutes.
  • Turn the heat back down to medium. Add the garlic and cook 30 seconds, stirring constantly.

1 c diced fresh mushrooms
1 c onion chopped
4 oz sliced water chestnuts
1 c cooked rice
1 can(s) cream of chicken soup
3/4 c mayonnaise or plain yogurt
1 Tbsp fresh lemon juice
1 tsp salt
1 pkg pepperidge farm dressing
1/4 c butter or margarine

Steps:

  • 1. Pre heat oven to 350 degrees
  • 2. Mix all ingredients(except topping which consists of dressing and butter or margarine) and place in a 2 quart ovenware dish.
  • 3. Saute Pepperidge Farm Dressing with butter or margarine enough to cover the cassorle dish
  • 4. Bake 35 minutes - may need tin foil to keep top from browning too much or just just keep a check on it

1 (8 ounce) can water chestnuts, drained & chopped
1 cup celery, chopped
1 (5 ounce) can chow mein noodles

1 teaspoon butter
