  • 2. Preheat oven to 450 degrees. In a large non-metal bowl combine sugars and eggs. Add in the pumpkin mush, the spices, salt, and evaporated milk. Pour the filling into the pie shell. Bake for 10 minutes, then reduce heat to 350 and bake for another 50 minutes, or until pie sets. Makes 6-8 servings. *Pumpkin mush: cut a medium pumpkin in half. Prick the skin several times with a fork, and place on a cookie sheet, cut-side up. Bake for 50 minutes or until very soft when poked with a fork. Let the pumpkin cool, then scoop out the seeds with a spoon. Scoop out the pumpkin meat, and throw away the skin. Mash the pumpkin meat with a potato masher or puree in a blender/food processor. Tips:

  • Selecting the Right Pumpkin: Choose a sugar pumpkin or pie pumpkin that is small to medium in size, weighing around 3 to 5 pounds. Look for pumpkins with deep orange flesh, smooth skin, and a sturdy stem.
  • Preparing the Pumpkin: Cut the pumpkin in half lengthwise and scoop out the seeds and stringy pulp. Place the pumpkin halves cut-side down on a baking sheet and roast in a preheated oven at 400°F for about 45 minutes, or until the flesh is tender. Let the pumpkin cool slightly before scraping the flesh away from the skin.
  • Making the Pie Crust: If using a store-bought pie crust, thaw it according to the package instructions. If making your own pie crust, use a combination of all-purpose flour, salt, shortening, and ice water to create a flaky and tender crust. Roll out the dough and trim the edges to fit a 9-inch pie plate.
  • Cooking the Pie: Pour the pumpkin mixture into the prepared pie crust and bake in a preheated oven at 425°F for 15 minutes. Reduce the oven temperature to 350°F and continue baking for about 45-50 minutes, or until a knife inserted into the center of the pie comes out clean. Let the pie cool completely before serving.
