4 large Russet potatoes (peeled and cubed)
1/4 cup butter
1/4 cup cream cheese
1/4 teaspoon salt
1 to 1 1/2 pounds ground lamb or ground beef
2 tablespoons butter
1 medium white onion (diced)
1/4 cup all-purpose flour
2 cups beef broth
1/4 cup Worcestershire sauce
Salt and Pepper to taste
1 cup frozen peas and carrots
1/2 cup frozen corn kernels
1/4 teaspoon thyme
2 cups cheddar cheese (to top)

Steps:

  • Add potatoes to a large pot of boiling water. Boil the potatoes until soft, 15-20 minutes.
  • Meanwhile, cook ground lamb (or ground beef) in a large saucepan over medium-high heat until browned, about 5 minutes. Add in onion and saute until onion is soft and translucent, about 5 to 7 minutes.
  • Add in 2 tablespoons butter and let fully melt before adding in the flour, stir until well mixed and let cook for 1-2 minutes. Pour in the beef broth and Worcestershire sauce and bring to a simmer. Add in frozen peas, carrots, corn, and thyme. Stir occasionally until the sauce thickens.
  • At this point the potatoes should be done. Drain and mash using either a potato masher or hand mixer. Mix in the butter, cream cheese, and salt until everything is melted.
  • Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9x13 pan. Spread meat and vegetable mixture into the bottom of the pan. Top with a layer of mashed potatoes. Sprinkle cheddar cheese on top.
  • Bake in a 350 degree oven, uncovered, for about 15-20 minutes., until cheese is warm and bubbly.

2 lbs ground beef
1 cup chopped onion
4 garlic cloves, chopped or 2 teaspoons minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons Worcestershire sauce
2 tablespoons flour
1 cup beef broth or 1 cup stock
1 cup heavy cream
24 ounces canned green beans (cut in half)
3 cups ready made mashed potatoes (fresh or made like bob evans brand)
3 cups cheddar cheese, shredded (or a blend)

Steps:

  • In skillet, brown beef and onion. Drain fat.
  • Add garlic, salt, pepper, worcestershire and flour. Cook for 1 minute.
  • Add beef broth/stock and then heavy cream.
  • Stir in beans.
  • Pour into 11x17 inch pan. top with 1 cup cheese.
  • Top with mashed potatoes. Sprinkle with the rest of shredded cheese.
  • Bake at 375 for 40 minutes. Remove from oven and rest 5-10 minutes.
  • I serve with salad, apple sauce and dessert of course!

2 pounds russet potatoes, peeled and quartered (about 4 medium potatoes)
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
1/4 small head green cabbage, thinly sliced (about 6 ounces or 2 cups)
1 leek, white and light-green parts only, chopped
2 cloves garlic, chopped
3/4 cup heavy cream
1 cup shredded sharp white Cheddar (about 3 ounces)
3 large egg yolks
2 teaspoons extra-virgin olive oil
3 medium carrots, peeled and thinly sliced
1 medium yellow onion, diced
1 stalk celery, sliced
2 cloves garlic, chopped
2 teaspoons fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1/4 cup tomato paste
2 pounds ground lamb
1 cup frozen peas, thawed
1/4 cup all-purpose flour
1 1/2 cups low-sodium chicken broth

  • Preheat the oven to 375 degrees F.
  • For the topping: Put the potatoes in a large saucepan and cover with cold water. Season with 2 teaspoons salt. Bring to a boil and cook until tender, about 20 minutes. Drain and reserve the saucepan.
