Categories     Bread     Side

Time 2h15m

Number Of Ingredients 9

1 1/2 tablespoons instant dry yeast
2 cups warm water
1 1/2 teaspoons salt
1 1/2 tablespoons caraway seeds
1 1/2 cup rye flour
3 cups all-purpose flour
2 tablespoons cornmeal for dusting
1/4 tsp cornstarch
1/4 cup water

Steps:

  • In the bowl of a stand mixer, combine the yeast, water, salt, caraway, and rye flour. Add in all-purpose flour 1 cup at a time, adding more if necessary to form a dough ball that doesn't stick to the sides of the bowl. Dough should be soft, not stiff, but should hold together on its own without being overly sticky.
  • Transfer to a lightly greased large bowl. Cover with a dish towel and let rise until double, about 1 hour.
  • Shape it into a loaf by stretching the dough from the top center of the dough ball over the edges, and then underneath. It should look and feel like you are holding the loaf with two hands and are pulling the dough inside out with your thumbs. Give several of those pulls with your thumbs until you have a nice looking little loaf.
  • Dust a pizza peel or wooden cutting board with cornmeal. Put the loaf on the prepared board and let it rise for another 40 minutes.
  • Preheat a pizza/baking stone in the oven to 450 degrees. Place a shallow pan on the rack below the baking stone.
  • Dissolve the cornstarch in the 1/4 cup water. Microwave for 45 seconds. Brush the cornstarch liquid on top of the loaf and cut several parallel lines on the top.
  • Bake the loaf directly on the stone. When you put the loaf in, pour a tall glass of water into the shallow pan below. It'll pop and sizzle and steam, so watch your hands. Close the oven door and bake for 30 minutes.

Use this recipe for rye bread as the base for any one of our delicious sandwiches.

Yield Makes 2 loaves

Number Of Ingredients 10

1 tablespoon plus 1 1/2 teaspoons active dry yeast (two 1/4-ounce envelopes)
2 1/4 cups warm water (110 degrees)
3 tablespoons plus 2 teaspoons honey
4 tablespoons unsalted butter, melted, plus more for bowl and pans
2 tablespoons caraway seeds, plus more for topping
4 1/2 teaspoons salt
4 cups all-purpose flour, plus more for surface and dusting
2 1/2 cups rye flour
1 large egg white
Nonstick cooking spray

Steps:

  • In a small bowl or liquid measuring cup, sprinkle yeast over 1/2 cup water. Add 2 teaspoons honey. Whisk until yeast dissolves. Let stand until foamy, about 5 minutes.
  • Add remaining 1 3/4 cups water to the bowl of an electric mixer fitted with the dough hook attachment, along with remaining 3 tablespoons honey, butter, caraway seeds, and salt. Mix on low to combine. Gradually add both flours, one cup at a time, mixing until dough comes away from sides of bowl and forms a ragged, slightly sticky ball. Butter a large bowl.
  • Knead dough on a floured surface until smooth and elastic but still slightly tacky, about 5 minutes. Shape into a ball. Transfer to prepared bowl; cover with plastic wrap.
  • Let dough stand in a warm place until it doubled in volume (it should not spring back when pressed), about 1 hour. Butter two 4 1/2-by-8 1/2-inch loaf pans. Punch down dough and divide in half.
  • Working with one piece of dough at a time, shape into a 7-by-7-inch square. Fold dough into thirds; press seam to adhere and pinch ends to seal. Place seam-side down in loaf pan. Repeat process with remaining piece of dough.
  • In a small bowl, mix egg white with 1 teaspoon water and brush mixture over tops of loaves; sprinkle with caraway seeds.
  • Spray two pieces of plastic wrap with nonstick cooking spray; drape loaves with prepared plastic wrap and let stand until dough rises about 1 inch above tops of pans, 45 minutes to 1 hour.
  • Preheat oven to 450 degrees on a conventional oven or 425 degrees on a convection oven. Reduce oven temperature to 400 degrees (conventional) or 375 degrees (convection).
  • Uncover loaves and transfer to oven. Bake, rotating pans after 20 minutes, until tops are golden brown, about 45 minutes. Transfer to wire racks. Let cool slightly; turn out loaves. Let cool completely before slicing.

Yield 14

Number Of Ingredients 10

2 cups unbleached bread flour (such as King Arthur®)
1 cup dark rye flour
3 tablespoons dry potato flakes
2 tablespoons caraway seeds
1 ½ tablespoons demerara sugar
2 ½ teaspoons instant yeast
1 ½ teaspoons sea salt
1 cup warm water
¼ cup canola oil
¼ cup sour pickle juice

Steps:

  • Place bread flour, rye flour, potato flakes, caraway seeds, demarara sugar, yeast, and sea salt in the bowl of a large stand mixer. Turn mixer to low and thoroughly mix dry ingredients. Beat warm water, canola oil, and pickle juice into dry ingredients. Fit dough hook onto mixer and beat until dough is rough and shaggy-looking.
  • Cover bowl with plastic wrap and let rest for exactly 30 minutes. Remove plastic wrap and knead dough in stand mixer with dough hook until smooth, firm, and only slightly sticky, 6 to 8 minutes. Turn dough onto a floured work surface and knead until smooth, 1 to 2 more minutes.
  • Form dough into a ball, place dough into an oiled bowl, and turn dough around several times in bowl to coat with oil. Cover the bowl with plastic wrap, set into a warm place, and let rise until nearly double, about 1 hour.
  • Grease a 5x9-inch loaf pan. Turn dough onto a lightly oiled surface, shape into a log, and place into prepared loaf pan. Cover with a cloth kitchen towel and let rise until top of dough has risen slightly over top of pan, 60 to 90 minutes.
  • Place rack in middle of oven and preheat oven to 350 degrees F (175 degrees C).
  • Bake loaf until golden brown and cooked through, about 35 minutes. The internal temperature of the bread should be 190 degrees F (90 degrees C). If loaf browns too quickly, cover loosely with a tent of aluminum foil with shiny side out. Remove from pan and cool on wire rack.

AMERICAN RYE BREAD RECIPE RECIPE

American Rye Bread Recipe Recipe image

Provided by KimberlyB

Number Of Ingredients 10

2 tablespoons butter, melted
2 cups white rye flour
3 cups high protein bread flour
2 tablespoons wheat gluten
1 seven gram packet instant yeast
2 cups water at 105 degrees
1 1/2 teaspoons salt
1/2 tablespoon caraway seeds (optional)
1 tablespoon molasses or molasses crystals
2 tablespoons melted butter

Steps:

  • 1. Melt the butter in the microwave and set it aside to cool. With shortening or butter, grease a large bowl for the dough and 2 large loaf pans (8½ x 4½). If you are going to make hearth loaves, grease a baking sheet and sprinkle it with cornmeal. 2. Measure the flours into a large bowl by whisking the flour so that it not packed and then spooning it into the measure followed by leveling the top with a straightedge. Add the gluten and stir to combine. 3. Put about 1/3 of the flour in the bowl of your stand type mixer equipped with a dough hook. Add the yeast. Add the water at the indicated temperature. With the dough hook, run the machine for thirty seconds to mix the water with the flour to create a slurry. Add the rest of the flour. Add the salt, the optional caraway seeds, the molasses, and the melted butter. Mix at medium speed for about three minutes or until the gluten has formed and the dough is elastic. The dough should be soft but not too sticky. To reach the right consistency, you may need to dribble a little extra water (maybe one tablespoon) or flour as the dough is kneading. Place the dough in the prepared bowl and cover it to keep the dough from drying while it rises. Let it rise until it doubles. 4. Gently deflate the dough and form two loaves either as free-standing loaves on a baking sheet or sandwich loaves for your bread pans. Cover the loaves and let them rise again until the dough is soft and puffy, about doubled in size. 5. If you are going to make hearth bread with its, chewy, crisp crust, see the direction for baking listed for "EZ Sourdough Bread." If not, preheat the oven to 350 degrees. Bake the bread for about 35 minutes. The time will vary depending on your loaves, the pans, and your oven. The bread should make a hollow sound when thumped on the bottom. The internal temperature of the loaves should be 190 degrees. 6. Remove the loaves form the pans and let them cool on a wire rack. Cool completely, or nearly so, before slicing.

Tips:

  • Use high-quality rye flour: The type of rye flour you use will have a big impact on the flavor and texture of your bread. Look for a dark, whole rye flour that is freshly milled.
  • Don't over-knead the dough: Rye dough is more delicate than wheat dough, so it's important to be gentle when kneading it. Over-kneading will make the bread tough.
  • Let the dough rise in a warm place: Rye dough takes longer to rise than wheat dough, so be patient. Let it rise in a warm place until it has doubled in size.
  • Bake the bread at a high temperature: Rye bread needs to be baked at a high temperature in order to get a crusty exterior and a chewy interior.
  • Let the bread cool completely before slicing: Rye bread is best when it's had a chance to cool completely. This will help the flavors to develop and the bread to set properly.

Conclusion:

American rye bread is a delicious and versatile bread that can be enjoyed in a variety of ways. It's perfect for sandwiches, toast, or just eating on its own. With a little planning and effort, you can easily make delicious rye bread at home. So what are you waiting for? Give it a try!
