3 extra-large eggs
1 1/2 tablespoons instant coffee granules, such as Nescafe

1 1/2 sticks (3/4 cup) unsalted butter, cut into pieces
2 cups granulated sugar
3 large eggs
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup heavy cream
4 tablespoons (1/2 stick) salted butter
1 tablespoon vanilla
1 teaspoon kosher salt
4 cups confectioners' sugar
2 sticks (1 cup) salted butter
1/4 cup heavy cream

Steps:

  • For the brownies: Preheat the oven to 325 degrees F. Line a 9-by-13-inch baking pan with foil or parchment paper.
  • In the top of a double boiler over medium heat, heat the chocolate and butter, stirring, until melted, about 5 minutes. Add the granulated sugar and stir gently until combined. Remove from the heat.
  • In a separate bowl, gently whisk the eggs. Add a small splash of the chocolate mixture to the eggs, stirring immediately (but still gently). Then add the tempered eggs into the chocolate, stirring constantly. Add the flour and stir until combined. Pour the batter into the prepared baking pan and spread to even out the surface.
  • Bake until just beginning to crisp at the edges, 25 to 30 minutes. Let cool completely in the pan.

  • For the salted caramel buttercream: Add the confectioners' sugar, butter and cream to a mixer fitted with the paddle attachment. Mix until light and fluffy, 3 to 4 minutes. Turn the mixer off, drizzle in the salted caramel sauce, turn the mixer back on and mix until combined.
  • To frost the brownies: Remove the cooled brownies from the pan, spread with the buttercream and cut into individual pieces.

SALTED CARAMEL BROWNIE

UPDATE: There have been widely varying results with the caramel topping, so I would recommend either leaving out the gelatin altogether or decreasing

Categories     dessert     main dish

Time 1h5m

Yield 20 servings

Number Of Ingredients 15

Slightly Adapted From An Amelie's-provided Recipes In Charlotte Magazine
FOR THE BROWNIES:
6 oz. weight Unsweetened Chocolate, Chopped
3/4 c. Unsalted Butter, Cut Into Pieces
2 c. Sugar
3 whole Eggs
1 c. All-purpose Flour
_____
FOR THE CARAMEL GLAZE:
1/2 c. Heavy Cream
2 c. Sugar
1/2 c. Water
1/4 c. Unsalted Butter, Cut Into Pieces
2 tsp. Kosher Salt
2 packages (about 1 Tablespoon + 1 Teaspoon) Powdered Gelatin Mixed With 1/4 Cup Water

Steps:

  • Note: Many have reported problems with the gelatin in the caramel sauce. For this reason, I'd recommend either leaving out the gelatin OR decreasing the amount by quite a bit.FOR THE BROWNIES:Preheat oven to 325 degrees F. Grease a 9-by-13-inch pan with butter or baking spray. In the top of a double boiler over medium heat, melt chocolate and butter, stirring until melted. Add sugar and stir gently until combined. Remove from heat.In a separate bowl, gently whisk the eggs. Add a small splash of eggs to chocolate mixture, stirring immediately (but still gently). Drizzle in the rest of the eggs, stirring constantly.Add flour and stir until combined. Pour batter into greased baking pan and spread to even out the surface. Bake for 25 to 30 minutes, then remove from oven to cool completely in the pan.FOR THE CARAMEL GLAZE:In a small saucepan over low heat, warm heavy cream. Do not boil.In a separate tall saucepan, combine sugar and water. Do not stir. Place over medium-high heat and bring to a boil. Cook until the mixture turns an amber color---not too dark, but definitely amber. Remove pan from stove.Add warm cream, butter, and salt. Stir gently until mixture is smooth and well combined. When it is smooth and calmed down a bit, pour in gelatin/water mixture and stir.TO FINISH:Pour caramel glaze all over completely cooled brownies. Allow to set completely. Cut into small rectangles and serve.***Lining the pan with foil would allow you to lift the brownies out of the pan after the caramel glaze sets. Then you can use a long, serrated knife and slice more easily.***

SALTED CARAMEL BROWNIES

Time 2h10m

Yield 9 large brownies

Number Of Ingredients 14

4 ounces (1 stick) unsalted butter
3 ounces unsweetened chocolate
1 cup sugar
2 eggs
1/2 cup flour
2 tablespoons instant espresso powder
Pinch salt
1/2 teaspoon vanilla
2/3 cup sugar
1 tablespoon unsalted butter
1/3 cup heavy whipping cream
1 teaspoon vanilla extract
2 tablespoons flaky sea salt
Ice cream, for serving

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Line an 8-inch square baking pan with parchment.
  • Melt the butter and chocolate together in a shallow heatproof bowl set over a saucepan with 1 or 2 inches of simmering water. Stir until completely melted and smooth.
  • Transfer the melted chocolate mixture to a medium bowl and stir in the sugar. Let cool, then whisk in the eggs, one at a time. Stir in the flour, espresso powder, salt and vanilla, and pour into the prepared baking pan.
  • Bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool completely.
  • For the caramel: While the brownies are baking, heat the sugar and 1/3 cup water in a heavy-bottomed medium saucepan over medium-high heat. Bring to a boil, swirling the pan but not stirring; cook until the mixture turns a golden amber color. Remove from the heat and immediately add the butter, swirling to combine; take great care to keep the pan at a distance when adding the butter, as the caramel will bubble up and foam. When the bubbling has subsided and the butter and caramel are combined, add the cream and vanilla and stir to incorporate. Set aside to cool.
  • Lift the cooled brownies out of the pan, cut into squares and place on a serving platter. Drizzle with the caramel and sprinkle with the sea salt. Serve with ice cream.

SALTED CARAMEL BROWNIES

Salted Caramel Brownies image

The salted caramel brownie is an ingenious combination of blond, bittersweet caramel and dark, bittersweet chocolate. Matt Lewis and Renato Poliafito of New York's Baked bakeries are not the first to note the affinity of caramel and chocolate, but by emphasizing the bitter, sweet and salty notes in both, they've made that rare thing - a perfectly balanced bite. The bittersweetness of the caramel can be easily adjusted by cooking it less (for a milder, Kraft-like taste) or more (edgier, stronger).

Time 1h15m

Yield About 2 dozen brownies

Number Of Ingredients 15

1 cup/200 grams granulated sugar
2 tablespoons/30 milliliters light corn syrup
1/2 cup/120 milliliters heavy cream
3/4 teaspoon salt, plus more to taste
1/4 cup/115 grams sour cream
2 sticks/225 grams unsalted butter, cut into 1-inch cubes, more for greasing pan
1 1/4 cups/150 grams all-purpose flour
1 teaspoon salt
2 tablespoons unsweetened cocoa powder
11 ounces/300 grams dark chocolate (60 to 72 percent cacao), coarsely chopped
1 1/2 cups/300 grams granulated sugar
1/2 cup/105 grams firmly packed light brown sugar
5 eggs, at room temperature
2 teaspoons vanilla extract
Coarse sugar (such as raw or turbinado) and flaky salt, for sprinkling

Steps:

  • Make the caramel: In a medium saucepan, combine sugar and corn syrup with 1/4 cup water. Bring to a boil and cook over high heat, stirring gently, until an instant-read thermometer reads 350 degrees or until the mixture is dark amber in color, 6 to 8 minutes. Remove from heat, slowly pour in heavy cream and salt (it will foam up) and whisk. Whisk in sour cream (it may look lumpy at first) and set aside to cool. Taste and add salt if needed to give the caramel a good balance of salty and sweet.
  • Make the brownies: Heat oven to 350 degrees. Use butter (or baking spray) to lightly grease a 9-x-13-inch baking pan. Line the bottom with a sheet of parchment paper, and butter or spray the parchment.
  • In a large bowl, whisk together flour, salt and cocoa powder.
  • Melt chocolate and butter together, either in the top of a double boiler set over simmering water, or in a microwave at low heat, working in 30-second bursts. Stir until chocolate and butter are melted and combined. Whisk in sugars. Set aside to cool to room temperature.
  • Using a sturdy whisk, add eggs one by one, whisking just until combined. Stir in vanilla.
  • Gently pour chocolate mixture over flour mixture. Using a spatula, fold together just until few streaks of flour are visible; do not overmix.
  • Pour batter into the pan and let settle. Drizzle caramel sauce over batter until batter is almost covered. (You may not use all the caramel.) On the surface, use the tip of a butter knife or icing spatula to swirl the batter and caramel together. Don't worry if it looks messy.
  • Bake 30 to 40 minutes, rotating the pan halfway through the baking time. At the 30-minute mark, shake the pan gently to test for doneness. When done, the brownies will be barely set in the center and puffed, but not dry, around the edges. Remove from oven and immediately sprinkle with coarse sugar and salt.
  • Let cool to room temperature before cutting. After cutting, if desired, drizzle any remaining caramel over the top. Keep refrigerated until ready to serve.

Tips:

  • Use high-quality chocolate: The quality of the chocolate you use will greatly affect the taste of your brownies. Use a chocolate that is at least 70% cacao.
  • Don't overmix the batter: Overmixing the batter will make the brownies tough. Mix just until the ingredients are combined.
  • Bake the brownies in a preheated oven: This will help to ensure that they bake evenly.
  • Let the brownies cool completely before cutting them: This will help to prevent them from crumbling.
  • Store the brownies in an airtight container at room temperature: They will keep for up to 3 days.
  • For a richer flavor, use dark chocolate: Dark chocolate has a higher cacao content than milk chocolate, which gives it a more intense flavor.
  • Add a pinch of salt to the caramel sauce: Salt helps to balance out the sweetness of the caramel and gives it a more complex flavor.
  • Top the brownies with a scoop of vanilla ice cream or whipped cream: This is a classic combination that is sure to please everyone.

Conclusion:

Amélie's Salted Caramel Brownies are a delicious and decadent treat that are perfect for any occasion. They are rich, fudgy, and have the perfect balance of sweet and salty. With their gooey caramel filling and crunchy sea salt topping, these brownies are sure to be a hit with everyone who tries them.
