Tips:

  • For the best flavor, use fresh coconut. If you're using unsweetened coconut, add an extra 1/2 cup of sugar to the dough.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Be sure to chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • If you like, you can toast the coconut before adding it to the dough. This will give the cookies a richer flavor.
  • You can also add other ingredients to the dough, such as chocolate chips, nuts, or dried fruit.
  • To make the cookies even more festive, you can decorate them with sprinkles or colored sugar before baking.
