Yield 4

Number Of Ingredients 12

1 (16 ounce) package bow-tie pasta
3 tablespoons butter, divided
1 tablespoon finely diced shallot
2 cups heavy whipping cream
½ cup dry white wine (such as Chardonnay)
cayenne pepper
2 pinches saffron
salt and ground black pepper to taste
1 pound uncooked shrimp - peeled, deveined, and tails removed
½ pound cooked lobster meat
½ pound cooked lump crabmeat
lemon, juiced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain, add 1 tablespoon butter, and stir. Set aside and keep warm.
  • Melt remaining butter in a large saucepan over medium heat. Add shallot and cook until softened, about 1 minutes. Add cream and wine and bring to a boil. Add cayenne pepper, saffron, salt, and black pepper. Reduce heat to a low simmer for 10 minutes; sauce will not thicken.
  • Heat a frying pan over medium heat. Add shrimp and cook until opaque, 3 to 5 minutes. Add lobster and crab and cook until heated through, about 2 minutes more. Season lightly with salt and black pepper.
  • Add seafood combination to the pot with the sauce and stir. Add lemon juice and simmer over low heat 10 minutes more.
  • Serve cooked pasta in individual bowls with 2 ladles of sauce on top. Fold sauce gently into pasta and top with a dash of black pepper.

1 ½ cups peas
1 cup basil pesto sauce
1 cup half-and-half

Tips:

  • Selecting the Freshest Seafood: Choose live lobsters when possible, as they offer the best flavor and texture. Ensure the lobsters are active and have a clear, vibrant appearance. For shrimp, select ones with a firm, translucent texture and avoid any with a slimy or discolored appearance. Opt for mussels and clams that are tightly closed and have a briny, fresh aroma.
  • Proper Cooking Techniques: Cook the seafood gently and avoid overcooking to preserve its delicate texture. For lobsters, steam or boil them until the shells turn bright red, indicating that they are cooked through. For shrimp, sauté them briefly in butter or olive oil until they turn opaque and slightly pink. Mussels and clams should be steamed or cooked in a flavorful broth until their shells open.
  • Creating a Flavorful Broth: Infuse the broth with aromatic vegetables, herbs, and spices to enhance the seafood's natural flavors. Use a combination of white wine, fish stock, and clam juice for a rich, briny base. Add aromatics like onions, celery, carrots, garlic, and fennel for depth of flavor. Incorporate herbs such as thyme, parsley, bay leaves, and saffron for a fragrant touch.
  • Choosing the Right Pasta: Select a pasta shape that will hold the seafood and sauce well. Short pastas like penne, rigatoni, or fusilli are ideal as they can trap the sauce in their crevices. Long pastas like spaghetti or linguine can also be used, but they may require more sauce to coat them evenly.
  • Adding Vegetables for a Balanced Meal: Enhance the pasta dish by incorporating a variety of vegetables. Sautéed mushrooms, zucchini, bell peppers, or asparagus add color, texture, and extra nutrients to the dish. Incorporate leafy greens like spinach or arugula towards the end of cooking for a touch of freshness.

Conclusion:

This Seafood Pasta with Lobster recipe offers a delectable combination of flavors and textures, showcasing the bounty of the sea. By selecting the freshest seafood, employing proper cooking techniques, and crafting a flavorful broth, you can create a dish that is both visually appealing and bursting with taste. Whether you are hosting a special dinner party or simply treating yourself to a delightful meal, this recipe is sure to impress. So, gather your ingredients, fire up the stove, and embark on a culinary journey that will tantalize your taste buds and leave you craving for more.
