Tips:
- Use unsweetened coconut for a more natural flavor. If you only have sweetened coconut, reduce the amount of sugar in the recipe.
- Toasted coconut adds a lovely nutty flavor. To toast coconut, spread it on a baking sheet and bake at 350 degrees Fahrenheit for 5-10 minutes, stirring occasionally.
- If you don't have raisins, you can use other dried fruits, such as cranberries, cherries, or apricots.
- For a richer flavor, use dark brown sugar instead of light brown sugar.
- If you don't have a food processor, you can chop the coconut and raisins by hand. Just be sure to chop them finely, so they distribute evenly throughout the bars.
- These bars can be made ahead of time and stored in the refrigerator for up to 3 days.
- To freeze the bars, wrap them individually in plastic wrap and place them in a freezer-safe container. They will keep for up to 2 months in the freezer.
Conclusion:
These Coconut Raisin Butter Tart Bars are a delicious and easy-to-make treat that are perfect for any occasion. They're made with a simple pastry crust, a sweet and creamy filling, and a generous topping of coconut and raisins. Whether you're serving them for a party or enjoying them as a snack, these bars are sure to be a hit.
