½ cup packed brown sugar
½ cup corn syrup
3 tablespoons butter, softened
1 large egg
⅓ cup chopped pecans
¼ cup raisins
2 tablespoons coconut
1 ½ teaspoons vinegar
1 pinch salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place tart shells on a baking sheet.

2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted
FILLING:
3 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup butter, melted
3 teaspoons vanilla extract
1/2 teaspoon salt
4 cups sweetened shredded coconut, divided

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

1 cup raisins
1 cup hot water, or as needed
1 ½ cups all-purpose flour
½ cup butter, softened
¼ cup packed brown sugar
1 cup brown sugar
⅓ cup butter, softened
1 egg
1 teaspoon vanilla extract
1 teaspoon heavy whipping cream
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place raisins in a cup; pour in hot water to cover, and set aside to soak, about 5 minutes.
  • Place 1 1/2 cups flour in a large bowl; cut in 1/2 cup butter until crumbly. Stir 1/4 cup brown sugar into flour mixture; press mixture evenly into the bottom of a 9x9-inch pan.
  • Bake in the preheated oven until lightly browned, about 15 minutes. Remove from oven, leaving oven on.

1 cup cold butter, cut in small chunks (no subs please!)
2 cups all-purpose flour
1/4 cup sugar
1 pinch salt
1/4 cup butter, melted (no subs please!)
3 large eggs, slightly beaten
2 cups brown sugar (can use 1 cup light and 1 cup dark brown sugar if desired)
1 tablespoon baking powder
1 tablespoon flour
1 1/2 teaspoons vanilla
1 pinch salt
1 cup coconut
3/4-1 cup raisins
1 cup chopped pecans (optional)

1/2 cup butter
1/2 cup powdered sugar
1 cup flour
2 tablespoons flour
2 2/3 cups coconut, divided
2 eggs
1 teaspoon vanilla
1 cup brown sugar, firmly packed
1 teaspoon baking powder
2/3 cup raisins
1/2 cup semi-sweet chocolate chips

Steps:

  • Beat butter till light and fluffy. Gradually beat in powdered sugar. Stir in 1 cup flour and 2/3 cup of the coconut.
  • Press into ungreased 9 inch square pan and bake at 350F for 20 minutes, or till golden brown.
  • Beat eggs and vanilla. Gradually beat in brown sugar. Stir in 2 tbsp flour and the baking powder. Stir in raisins and 1 c of the coconut.
  • Pour over crust in pan and bake @ 15 minutes longer. Sprinkle with chips.
