APRICOT ORANGE SYRUP WITH AMARETTO
My parents have an apricot tree, so I've eaten fresh apricots all my life. I'm used to eating them fresh only, but I recently purchased some apricots that ripened very quickly. I wanted to make a jam or syrup out of them and couldn't find what I wanted, so I made something up. The result is a very sweet, thick syrup. Leave out the amaretto if you don't use it in cooking.

Steps:
- Mix together the apricots, sugar, vanilla extract, orange juice, and amaretto liqueur in a saucepan over medium heat, stirring until the sugar has dissolved. Bring to a boil, and cook, stirring constantly, until the apricots are soft and have started to release their juice, about 5 minutes. Reduce heat to low, and simmer until the apricots have broken down, about 1 1/2 hour. If mixture is too thick or begins to burn, stir in 1 tablespoon of water and mix well.
- Stir cornstarch into 1/4 cup water, and pour into the apricot mixture. Bring to a boil, and simmer until the mixture forms a thick syrup, about 30 more minutes.

AMARETTO SOUR
Jeffrey Morgenthaler, the bar manager of Pépé Le Moko and Clyde Common in Portland, Ore., enjoyed amaretto sours as a young man. As a bartender, he embarked on a project to make a better version of this often-mocked drink, which was typically composed of just amaretto and sour mix. He boosted the alcoholic strength by mixing in nearly a full ounce of overproof bourbon, replaced the sour mix with real lemon juice and added an egg white - a common ingredient in many sour recipes from the past. Given all the alterations, he might have given the cocktail a new name, but decided against that. "There wouldn't have been any point," he said. "There's a big difference between if I took this drink and made it good, and if I invented a new drink with amaretto. The latter wouldn't have the same gravitas."

Tips:
- Choose the right amaretto: Not all amarettos are created equal. For the best flavor, choose a high-quality amaretto that is made with real almonds.
- Use fresh ingredients: The fresher the ingredients, the better the simple syrup will taste. This is especially true for the amaretto and the water.
- Simmer, don't boil: When making simple syrup, it's important to simmer the ingredients over low heat. Boiling the syrup will cause it to lose its flavor.
- Let the syrup cool completely: Before using the simple syrup, let it cool completely. This will help it to thicken and develop its full flavor.
- Store the syrup properly: Simple syrup can be stored in a sealed container in the refrigerator for up to 2 weeks.
Conclusion:
Amaretto simple syrup is a versatile ingredient that can be used in a variety of cocktails, mocktails, and desserts. It's easy to make and can be tailored to your own taste preferences. With a few simple ingredients and a little bit of time, you can create a delicious and flavorful simple syrup that will take your drinks and desserts to the next level.
