1/2 teaspoon cream of tartar
1 cup sugar
PARFAITS:
5 cups sliced peeled fresh or frozen peaches, thawed
1/4 cup sugar
1 tablespoon plus 1/4 cup Amaretto, divided
1/2 cup cream cheese, softened
1 cup confectioners' sugar
2 cups heavy whipping cream
Optional toppings: Toasted sweetened shredded coconut and/or sliced almonds

Steps:

  • In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. , Drop by heaping tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 250° for 32-38 minutes or until firm to the touch. Turn oven off; leave meringues in oven for 1 hour. Remove from the oven and cool on baking sheets., In a large bowl, combine the peaches, sugar and 1 tablespoon Amaretto. Cover and refrigerate for at least 30 minutes. In another bowl, beat cream cheese and confectioners' sugar until smooth. Beat in cream and remaining Amaretto until thickened., Crumble two-thirds of the cookies; place 2 tablespoons crushed cookies in each of 6 dessert dishes. 16 ounces canned peach halves, pureed

2 cups milk
1 3/4 cups sugar
1/2 tsp. salt
2 cups half and half
1 T. vanilla
4 cups whipping cream
1 cup Amaretto liqueur
1 tsp. cinnamon
4 cups fresh peaches (half amount pureed, and half diced.)

Steps:

  • Scald milk until bubbles form around edges of pan. Remove from heat. Add sugar and salt until dissolved. Stir in half and half, vanilla, whipping cream, and 1/2 cup Amaretto. Cover and refrigerate 30 minutes. Add cinnamon to pureed peaches and diced peaches, then add to chilled mixture. Refrigerate another 15 minutes. Freeze in an ice-cream maker according to the manufacturer's directions. Drizzle remaining Amaretto liqueur over dished out servings.

1/2 c butter, melted or 1/4 cup if making gingersnap crust.
2-1/2 c graham cracker crumbs or 25 gingersnap cookies into coarse crumbs
FILLING
4 pkg (8 ounces) cream cheese, softened
1-1/4 c plus 2 tbsp.sugar
4 small peaches (about 1 1/4 pounds), peeled, pitted, sliced 1/4 inch thick
4 eggs
2 Tbsp fresh lemon juice
1/2 c sour cream
1-1/2 tsp vanilla
GLAZE
1/2 c peach preserves
1-1/2 tsp fresh lemon juice
1/2 large peach, peeled, pitted, very thinly sliced

Steps:

  • 1. Crust: Add butter to graham cracker crumbs and stir until evenly moistened. Press crumbs over bottom and 1 inch up sides of a 9 inch spring form pan. Bake crust at 350 degrees about 8 minutes or until crust is beginning to brown. Cool on rack. Reduce oven temperature to 325 degrees.
  • 2. Filling: Combine peaches, 2 tbsp. sugar, and lemon juice in heavy large saucepan. Cover and cook over medium-high heat until sugar dissolves and peaches are juicy, stirring occasionally, about 5 minutes. Uncover and cook until peaches are tender and juices thicken, about 5 minutes. Cool compote.
  • 3. Using, electric mixer, beat cream cheese in large bowl until fluffy. Gradually add 1 1/4 cups sugar and beat until smooth. Beat in eggs, one at a time. Mix in sour cream and vanilla. Spoon half of cheese mixture (about 3 cups) into crust. Spoon peach compote over by tablespoonfuls, spacing apart. Top with remaining cheese mixture.
  • 4. Place large piece of foil on oven rack. Place pan with cheesecake on foil. Bake until puffed, set in center, and beginning to brown, about 1 1/4 hours. Place hot cheesecake on rack; cool 5 minutes, then run small sharp knife around pan sides to loose. Place cheesecake, uncovered, on rack in refrigerator and chill overnight. Can make up to 2 days ahead. Cover and keep chilled.
  • 5. GLAZE: Combine preserves and lemon juice in heavy small saucepan. Stir over medium heat until glaze comes to a simmer. Strain into a small bowl. Release pan sides; place cheesecake on platter. Spread glaze over top of cheesecake to within 1/4 inch of edge. Chill cheesecake until glaze sets., at least 30 minutes and up to 8 hours. Arrange peach slices in center of cake. To prevent cheesecake from splitting on top, place a shallow pan of water into the oven while cheesecake is baking.
