1/8 teaspoon salt
4 large eggs, lightly beaten
TOPPING:
2 cups sour cream
1/4 cup sugar
1 teaspoon almond extract

Steps:

  • In a large bowl, combine the cracker crumbs, butter and sugar. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan., In a large bowl, beat cream cheese and sugar until smooth. Beat in the Amaretto, extracts and salt. Add eggs; beat on low speed just until combined. Pour into crust. Place pan on a baking sheet., Bake at 325° until center is almost set, 55-60 minutes. Let stand for 5 minutes. Combine the sour cream, sugar and almond extract; spread over top of cheesecake. Bake 5 minutes longer., Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

1 ½ cups white sugar
2 tablespoons cornstarch
6 eggs
1 (16 ounce) container sour cream
½ cup melted butter
1 tablespoon vanilla extract
1 tablespoon orange extract
1 tablespoon lemon juice
1 tablespoon almond extract
2 fluid ounces amaretto liqueur
2 ½ cups crushed macaroon cookies
⅔ cup melted butter

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Wrap the outside of a 10 inch springform pan with foil.
  • In a large bowl, beat together cream cheese, sugar and corn starch until smooth. Beat in eggs one at a time. Beat in sour cream and 1/2 cup melted butter. Stir in vanilla and orange extracts, lemon juice, almond extract and amaretto liqueur.
  • To make crust: Combine macaroons and 2/3 cup melted butter. Blend thoroughly. Place most of the crust mixture in the bottom of the springform pan. Pour cheese mixture over crust, and sprinkle some crust mixture on top of batter.

3 tablespoons butter, melted
24 ounces cream cheese (low-fat or fat free can be used)
2/3 cup sugar
1/4 cup sour cream

Steps:

  • For crust: Mix together in small bowl. Press mixture evenly onto bottom of greased 9" springform pan.
  • For Cheesecake: In mixing bowl, combine cream cheese, 2/3 cup sugar, sour cream, and cornstarch. Add eggs, one at a time, beating well after each. Beat in vanilla extract. Steps:

  • In a small bowl, stir together the graham cracker crumbs and melted butter. Press into the bottom and sides of a 9 inch springform pan, refrigerate.
  • Put the water into a small saucepan, water should be cold. Sprinkle the gelatin over the water, and let stand for 1 minute. Then, stir over low heat until gelatin is dissolved, set aside. In a large bowl, beat cream cheese and sugar until fluffy. Gradually add the evaporated milk and lemon juice, container to beat until fluffy. Scrape the bottom of the bowl occasionally to make sure there are no lumps. Gradually beat in the amaretto, vanilla and the gelatin mixture until everything is well blended.

I don't know why someone didn't want a book with a recipe this delicious in it. It is nice and thick, melts in your mouth, and forget about dieting...this cheesecake is chock full of diet-wrecking temptations!

1 cup graham cracker crumbs
1/4 cup sugar
2 tablespoons unsalted butter, softened
2 lbs cream cheese, softened
1 1/2 cups sugar

1 tablespoon vanilla extract

1 cup chopped fresh strawberries
1 quart strawberry, sliced

  • You will also need: 9-inch springform pan.
  • To prepare crust place graham crackers, sugar and butter in a small mixing bowl. Blend well with fingers or a pastry blender. Press into the bottom of a well-buttered 9" springform pan. Chill in the freezer or refrigerator for about 30 minutes while you prepare the batter and strawberries.
  • In a large bowl, beat the cream cheese, sugar and heavy cream until smooth. Add the eggs, one at a time, making sure that the mixture is smooth after beating in each egg.
  • Add the lemon juice, brandy extract, sour cream, vanilla, and flour and continue beating until very smooth and creamy.
  • Fold in the chopped strawberries. Pour the mixture into the chilled springform pan that you have placed on a cookie sheet (the batter will come to the top of the pan so do not be alarmed).
  • Bake in a preheated 425° oven for 15 minutes, then reduce the temperature to 275° and continue to bake for 1 hour.
  • Transfer to a wire rack and allow to cool for 3 hours. While the cake is cooling, marinate the sliced strawberries in the Amaretto and sugar for about 3 to 4 hours.
  • Arranges the slices decoratively on top of the cooled cheesecake and bake in a 350° oven for 7 minutes.
  • Transfer to a wire rack and allow to cool completely for 2 hours. Remove the sides of the springform pan and refrigerate overnight.
  • Remove the cake from the refrigerator for at least 2 hours before serving.

1 tsp disaronno or other almond flavored liquor

1 Tbsp corn starch
3 large eggs
2 Tbsp butter, melted

1 c almonds, natural sliced

Steps:

  • 1. Combine the first 5 ingredients, mixing well. Press into the bottom and up sides of a 8-inch springform pan. Set aside.
  • 2. Beat cream cheese with an electric mixer until light an fluffy'.
  • 3. Gradually add sugar, flour, and corn starch beating well.
  • 4. Add eggs one at a time beating well after each addition.
  • 5. Stir in two tablespoons of melted butter, amaretto, and almond extract. Spoon batter into greased springform pan.
  • 6. Wrap sides and bottom of springform pan with foil. Add two inches of boiling water to a roasting pan large enough to accommodate the springform pan making a water bath. Place springform pan into water bath.
  • 7. Pre heat oven to 500 Degrees F. Place roasting pan with cheesecake in oven and bake for 10 minutes then drop temp to 200 degrees F for 1 1/2 hours.
  • 8. While cheesecake is baking toast almonds in skillet until lightly browned and fragrant.
  • 9. When cheesecake is done, turn off oven and crack oven door. Let cool to room temperature in oven; refrigerate for 12 hours.
  • 10. Brush the top of cake with a little additional amaretto the sprinkle on all of the almonds. Remove sides of pan. Slice. Enjoy.

1 teaspoon vanilla extract

32 amaretti di saronno cookies (I can't remember exactly what they are called, but they are chocolate-dipped rolled waffle cookies)
16 ounces cream cheese, softened
3/4 cup brown sugar, firmly packed
1 tablespoon unflavored gelatin (1 envelope of Knox unflavoured gelatin. If using sheet gelatin, use appropriate quantity to set 2 c)
1/2 cup Amaretto (almond liqueur)
1 cup whipping cream
6 ounces semisweet chocolate or 6 ounces bittersweet chocolate

Steps:

  • If you cannot find the waffle cookies already pre-dipped in chocolate, then melt 2 squares of semi-sweet or bittersweet chocolate with 2 T of butter. Pour the chocolate mixture into a tall thin glass and dip the rolled waffle cookies in the chocolate. Place on a waxed paper-lined pan. Chill until set.
  • Beat the cream cheese and brown sugar together until smooth.
  • Sprinkle the gelatin over the Amaretto, in a small saucepan, and let stand for 5 minutes. Stir over low heat until the gelatine dissolves.
  • Blend the warm gelatin into the cheese mixture.
  • Beat the whipping cream until soft peaks form. Fold into the gelatin and cheese mixture. Reserve 1 cup of this mixture.
  • Melt the 6 squares of chocolate and let cool. Fold the chocolate into the remaining cheese mixture. Reserve 1/2 cup of this mixture.
  • Use small dabs of the chocolate cheese mixture to aid in standing the prepared waffle cookies, dipped ends up, in a ring around the rim of a 8 1/2 inch springform pan.
  • Spread the remaining chocolate cheese mixture into the prepared pan. Spread reserved plain cheese mixture evenly on top. Top with dabs of the reserved 1/2 cup of the chocolate cheese mixture. Swirl with a knife to create marbled effect.
  • Chill for at least 4 hours.
  • Garnish, if desired, with chocolate curls or whole blanched almonds. Let your imagination take you away!

1 cup flour
1/3 cup brown sugar (packed)
6 tablespoons butter (softened)
8 ounces cream cheese (room temp)
1/4 cup sugar
1 egg
4 tablespoons Amaretto
1/2 teaspoon vanilla
4 tablespoons almonds (chopped)

Steps:

  • In a large mixing bowl, combine flour and brown sugar.
  • Cut in butter until mixture forms fine crumbs.
  • Reserve 1 cup crumb mixture for topping. Press remainder over bottom of ungreased 8 inch square baking pan. Bake for 12-15 minutes at 350 or until lightly browned.
  • In mixer bowl, thoroughly cream together cream cheese and granulated sugar. Add egg, amaretto, and vanilla; beat well. Spread batter over partially baked crust.
  • Combine almonds with reserved crumb mixture; sprinkle over batter.
  • Bake for 20-25 minutes. Cool and cut into squares.

1 c graham cracker crumbs
1/4 c sugar
2 Tbsp unsalted butter at room temperature
FILLING INGREDIENTS
2 lb cream cheese, softened
1 c heavy cream
6 eggs
3 Tbsp lemon juice
1/2 tsp brandy
1 c sour cream
1 Tbsp vanilla extract
2 Tbsp all purpose sifted flour
1 c strawberries, sliced
TOPPING INGREDIENTS
1 c amaretto liqueur
1 Tbsp sugar
1/2 c strawberries, sliced

Steps:

  • 1. In a small mixing bowl, combine the crumbs, sugar and butter.
  • 2. Blend well with fingers, fork or pastry blender.
  • 3. Press onto the bottom of a well-buttered springform pan.
  • 4. Chill for 30 minutes.
  • 5. FILLING: In a large bowl, beat the cream cheese, sugar and cream until smooth.
  • 6. Add the eggs, one at a time, making sure that the mixture is smooth and creamy.
  • 7. Fold in the strawberries.
  • 8. Pour mixture into the chilled pan and bake in a pre-heated 425 degree oven for 15 minutes, then reduce the temperature to 275 and continue to bake for 1 hour.
  • 9. Transfer to a wire rack and allow to cool for 3 hours.

  • 1. CRUST: Combine ingredients; press onto bottom of a 9-inch springform pan; set aside.
  • 2. FILLING: Combine cream cheese, sugar, and flour, mixing until well blended.

  • 4. Blend in sour cream and liqueur; pour over crust.

1 egg
3/4 cup flour
24 ounces cream cheese, softened
3/4 cup granulated sugar

Steps:

  • Combine margarine and sugar until light and fluffy. Blend in egg. Add flour; mix well. Spread dough onto bottom of a 9-inch springform pan. Bake at 450 degrees F for 10 minutes. Combine cream cheese, sugar and flour, mixing at medium speed of electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Add peaches and liqueur; mix well. Pour over crust. Bake at 450 degrees F for 10 minutes. Reduce oven temperature to 250 degrees F. Continue baking for 65 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.

1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup margarine or 1/3 cup butter, melted
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can eagle brand amaretto sweetened condensed milk (Not Evaporated Milk)
3 eggs
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 300 degrees.
  • Combine crumbs, sugar and margarine.
  • Press firmly on bottom of 9 inch springform pan.
  • In large mixer bowl, beat cheese until fluffy.
  • Gradually beat in Eagle Brand until smooth.
  • Add eggs and vanilla; mix well.
  • Pour into prepared pan.
  • Bake 45-50 minutes or until center is set.
  • Cool; chill.

  • For Cookie Ring: Use 32 round chocolate-dipped wafer cookies. Place cookies in ring 81/2" springform pan. For cheesecake: Beat 500g softened cream cheese until smooth; blend in ¼ cup firmly packed brown sugar. Sprinkle 7g envelop unflavoured gelatin over 1/2cup almond liqueur. Let stand 5 min. Stir over low heat until gelatin dissolves. Blend warm gelatin into cheese mixture. Beat 1 cup whipping cream; fold into cheese mixture. Set aside 1 cup of this mixture. Melt 6 squares semi-sweet chocolate; cool. Fold into remaining cheese mixture. Spread all but ½ cup chocolate mixture into prepared pan; spread plain mixture evenly on top. Top with remaining chocolate mixture; swirl with knife to marble. Chill at least 3 hours. For garnish: Dip whole unblanched almonds in chocolate. Chill. Place on top of cookies, around cake.

1 c almonds, slivered
1 1/2 c graham cracker crumbs
1/4 c sugar
6 Tbsp butter, melted
20 oz ricotta cheese
3-8oz pkg cream cheese, room temperature
12 oz sour cream
1 1/2 c sugar
6 Tbsp all purpose flour
4 Tbsp amaretto liqueur
6 eggs, lightly beaten
3 medium peaches, sliced thin

Steps:

  • 1. Use a greased 10-in. springform pan. Mix graham cracker crumbs and sugar together. Then add melted butter, mix well. Press onto the bottom and 1 in. up the sides of prepared pan. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack.
  • 2. In a large bowl, beat the ricotta, cream cheese, sour cream and sugar until well blended. Beat in flour and 2 tablespoons liqueur. Add eggs; beat on low speed just until combined. Pour into crust.
  • 3. Place springform pan on a large baking sheet. Bake at 325° for 1-1/2 hours or until center is just set and top appears dull. Remove springform pan from baking sheet. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
  • 4. Toss peaches with remaining liqueur; arrange over top of cheesecake. Sprinkle slivered almonds in the center.
