5 cups finely chopped roasted almonds
2 cups white sugar
1 ½ teaspoons unsweetened cocoa powder
4 eggs
1 (1 ounce) bottle almond extract, or to taste
¼ cup white sugar
45 whole almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.

125 g ground almonds
1 cup sugar
2 large egg whites
1/2 teaspoon vanilla
1 -2 drop almond essence
blanched almond, for decorating

Steps:

  • Combine the ground almonds with sugar, egg whites, vanilla and almond essence and mix well in small bowl of electric mixer.
  • Beat mixture on medium speed for 3mins.
  • Allow mixture to stand for 5 minutes.
