2 Cups Rice Chex Cereal
2 Cups Kix Cereal
2 Cups Captain Crunch Cereal
2 Cups Thin Pretzels
1 Cups Peanuts
1 Cups Plain M&M's
2 (16 Ounce) Packages White Almond Bark

Steps:

  • Spread 18 inches of wax paper out on your countertop.
  • Fold all the ingredients, except the white almond bark, together is a large mixing bowl
  • In a microwave-safe bowl, melt the almond bark in the microwave, according to package instructions.
  • Fold the melted almond bark into the cereal mixture until the mixture is evenly coated. Pour out onto waxed paper and allow the almond bark to set.
  • Break up bark into pieces and serve.

The best Christmas snack you'll ever try---everyone starts asking for it weeks before Thanksgiving. A friend gave me the recipe, and she had found it in a magazine, "Southern Living Lady", I think.

Number Of Ingredients 8

3 cups Rice Chex
3 cups Corn Chex
3 cups honey nut Cheerios toasted oat cereal
2 cups small pretzels
2 cups salted peanuts
1 (12 ounce) bag holiday M&M's plain chocolate candy (red & green)
1 (12 ounce) bag holiday M&M's peanut chocolate candies
2 (12 ounce) bags white chocolate chips

Steps:

  • Mix all ingredients but the white chocolate morsels in a large bowl.
  • Melt white chocolate morsels according to directions on the package.
  • Pour melted white chocolate over the cereal mixture and toss well to coat.
  • Spread on waxed paper and let sit until the white chocolate hardens.
  • Store in an airtight container.

Alton very cleverly used a steamer basket to roast the chilies on the stove top and a pair of standard kitchen scissors to cut the dried chiles! Just one or two very minor changes were made by me.

6 firm roma tomatoes, chopped small
4 garlic cloves, finely minced
2 jalapenos, seeded and minced (I used one jalapeno and one serrano)
1 jalapeno, roasted, skinned and chopped
1 red bell pepper, stemmed, seeded, membrane removed, finely diced
1/2 red onion, diced small
2 dried ancho chiles, seeded, cut into short strips and snipped into small pieces (read *NOTE)
1 tablespoon extra virgin olive oil
1 lime, juice of
chili powder, to taste (I didn't use)
salt and pepper, to taste
fresh cilantro or fresh parsley, to taste

Steps:

  • *NOTE: I broke up the dried anchos into pieces and used a clean coffee mill to coarsely grind the chilies.
  • To roast the jalapeno you have several options: oven roast, or stovetop roast either in a pan or steamer basket.
  • For steamer basket directions, place the chili in the opened basket and place directly on the heating element.
  • Turn the heat on to medium flame and dry roast for about 5 minutes or until chili is charred all over, turning occasionally to roast evenly.
  • Set the steamer basket aside on a heatproof surface. Cover with a heat resistant bowl or lid and allow to sweat for 10-15 minutes.
  • Once cool enough to handle, place the chili under running water and loosen off the skin. Remove the seeds and membrane.
  • Mince the chili.
  • In a bowl, combine all ingredients. Note: Alton say that the dried ancho chili is not to be dehydrated. Marinating will soften the chili and hydrate it.
  • Cover and place salsa in refrigerator for up to 12 hours for flavors to infuse.
  • Serve with your favorite chips.
  • Prep time does not include marinating.

This is a very yummy, sweet party mix that gets a lot of requests. I usually make two batches during the Christmas season and one during Easter and sometimes throughout the year "just for the fun of it." If it has been a while since I have taken some to work, they start reminding me it is time to make another batch. It is very addicting. This makes a huge batch. You can cut it in half, but why? I have a large (28 quart) storage container that I make it in and store it in. You can use different colored M&M's for the different seasons, or use team colors for a football party or tailgate snack.

1 (12 ounce) box Kix cereal
2 (12 ounce) boxes Crispix cereal
1 (16 ounce) can cocktail peanuts
1 (14 ounce) bag thin pretzel sticks
3 (14 ounce) bags plain M&M's
4 (24 ounce) blocks white almond bark

Steps:

  • Mix the cereals, peanuts, pretzels and M&M's together in a very large container.
  • Melt the almond bark. I do this by placing it all in a large bowl and microwaving on high for 2-3 minutes, stirring and repeating until it is melted.
  • Pour over the cereal mixture and mix well.
  • Lay out on a table or a long counter and break apart. Allow to dry, breaking apart as needed.
  • Store tightly covered.

Update 12/26/06: Hat tip to "Kat's Mom" for catching a major typo! No, it should NOT have been 60 oz. of chocolate chips. It should be 16 oz!!! Try this one again, and I promise you'll enjoy it, or I'll refund you the ingredients.

1 cup butter
1 cup peanut butter
1 (16 ounce) box Rice Chex
2 (16 ounce) boxes confectioners' sugar
1 (16 ounce) bag chocolate chips (optional)
1 (16 ounce) jar dry roasted peanuts (optional)

Steps:

  • For "WHITE TRASH," use the first four ingredients only. Or for a fun variation - add the optional chocolate chips and dry roasted peanuts to make "TRAILER TRASH!".
  • Melt butter, peanut butter (and chocolate chips) together in medium sauce pan OVER LOW HEAT. Place Rice Chex (and dry roasted peanuts) in a large container (plastic salad mixing bowls with lids work great!). Pour melted mixture over Rice Chex (and peanuts) and toss, until evenly coated throughout.
  • ---Kids love this part!---.
  • Then pour conf. sugar over mixture (1 box at a time), place lid on container, and shake shake shake! Shake well, until all the mixture is coated with sugar. Repeat with second box.
  • Serve, and enjoy!
