THE BEST LENTIL SOUP

The Best Lentil Soup image

Brown lentils are the star of this dish. To boost flavor, we used a classic mirepoix-onion, celery and carrot - as well as thyme, bay and oregano for an herby finish. We found the fresh lemon juice and parsley at the end brightened up the soup and added a nice pop of color.

Categories     main-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 15

3 tablespoons olive oil
3 medium carrots, cut into 1/4-inch pieces
1 medium onion, diced
1 large celery stalk (about 2 ounces), cut into 1/4-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 large clove garlic, minced
1 1/2 cups dried brown lentils
4 cups vegetable stock
7 sprigs thyme, leaves stripped (about 1 teaspoon leaves)
1 bay leaf
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 teaspoon lemon zest, plus the juice of 1/2 lemon (about 2 tablespoons)
1/2 cup flat-leaf parsley leaves, plus more for garnish, roughly chopped

Steps:

  • Heat the oil in a large heavy-bottom pot over medium-high heat. Add the carrot, onion, celery and 1 teaspoon salt and cook, stirring occasionally, until the vegetables are starting to caramelize and take on a dark brown color, 8 to 10 minutes (this step is important as it will add tons of flavor to your soup!).
  • Stir in the tomato paste and garlic and cook, scraping up the brown bits, until the garlic is fragrant and slightly softened, 1 to 2 minutes. Add in the lentils, stock, 4 cups water, thyme, bay leaf, oregano, red pepper flakes, lemon zest, 2 teaspoons salt and a generous amount of black pepper and stir to combine. Bring to a boil then reduce the heat to low. Cover and cook until the lentils are softened with just a bit of bite, 25 to 30 minutes.
  • Remove the bay leaf. Puree 2 1/2 cups of the soup in a blender until smooth then stir back into the pot. Stir in the lemon juice and parsley. Ladle into bowls and garnish with more parsley.

Lentil and Ham Soup image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 12

6 tablespoons unsalted butter
2 stalks celery, chopped
2 carrots, chopped
2 turnips, peeled and cut into 1-inch cubes
1 red onion, chopped
2 tablespoons all-purpose flour
1 teaspoon chopped fresh thyme
1 boneless ham steak (about 3/4 pound), cut into 3/4-inch cubes
2 15.5-ounce cans lentils (do not drain)
1/2 baguette, cut into 1/2-inch cubes
1/4 cup chopped fresh parsley
Kosher salt and freshly ground pepper

Steps:

  • Heat 3 tablespoons butter in a large pot over medium heat. Add the celery, carrots, turnips and onion and cook, stirring occasionally, until they start browning, about 8 minutes. Add the flour and thyme; cook, stirring, until the flour is incorporated, about 2 minutes. Stir in 4 cups hot water until smooth.
  • Add the ham and the lentils with their liquid. Increase the heat to medium high and bring just to a boil, then reduce the heat to medium low so the soup is gently simmering. Cook, stirring occasionally, until the soup thickens slightly and the lentils are creamy, about 7 minutes.
  • Meanwhile, melt the remaining 3 tablespoons butter in a large skillet over medium heat. Add the baguette cubes; sprinkle with the parsley and season with salt and pepper. Cook, stirring, until lightly toasted, about 7 minutes. Serve the soup topped with the croutons.

GOOD EATS LENTIL SOUP

Good Eats Lentil Soup image

Adapted from Alton Brown's Good Eats, this is wonderful soup! I have tweaked it a little, after reading all the reviews. Enjoy! To make the soup more of a main meal, add soy chorizo to it!

Provided by Sharon123

Categories     Lentil

Time 1h15m

Yield 6-8

Number Of Ingredients 13

2 tablespoons olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
1 -1 1/2 teaspoon kosher salt
1/2 cup soy chorizo sausage (optional)
1 lb lentils, picked and rinsed
1 cup peeled and chopped fire-roasted tomatoes
2 quarts vegetable broth (or for meat eater's, chicken broth)
1/2 teaspoon freshly ground coriander
1/2 teaspoon freshly ground toasted cumin
1/4 teaspoon black pepper
1/4 teaspoon cardamom (optional)

Steps:

  • Place the olive oil into a large 6-quart Dutch oven and set over medium heat.
  • When hot, add the onion, carrot, celery(if using soy chorizo sausage, add now) and salt and sweat until the onions are translucent, approximately 6 to 7 minutes.
  • Add the lentils, tomatoes, broth, coriander, cumin, pepper and cardamom if using, and stir to combine.
  • Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until lentils are tender, about 35 to 40 minutes.
  • Using an immersion blender, puree to your preferred consistency(or put in batches into the blender and puree). Serve immediately. Enjoy!
  • Note: One reviewer said when serving, to add 1 tbls. of vinegar to the soup. I haven't tried this yet, but you might want to.

Tips:

  • Use a variety of lentils. This will give your soup a more complex flavor and texture. You can use brown lentils, green lentils, or a mix of both.
  • Sauté your vegetables before adding them to the soup. This will help to develop their flavor and make the soup more flavorful.
  • Use a good quality vegetable broth. This will make a big difference in the flavor of your soup. You can use store-bought vegetable broth or make your own.
  • Add some spices to your soup. This will help to give it a more complex flavor. You can use cumin, coriander, paprika, or any other spices that you like.
  • Don't overcook the lentils. They should be cooked until they are tender but still hold their shape.
  • Serve your soup with a variety of toppings. This could include chopped cilantro, yogurt, croutons, or a drizzle of olive oil.
