Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 11

3 pounds stew meat (beef, pork, and/or lamb)
2 teaspoons peanut oil
1 1/2 teaspoons kosher salt
1 (12-ounce) bottle of beer, preferably a medium ale
1 (16-ounce) container salsa
30 tortilla chips
2 chipotle peppers canned in adobo sauce, chopped
1 tablespoon adobo sauce (from the chipotle peppers in adobo)
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin

Steps:

  • Place the meat in a large mixing bowl and toss with the peanut oil and salt. Set aside.
  • Heat a 6-quart heavy-bottomed pressure cooker over high heat until hot. Add the meat in 3 or 4 batches and brown on all sides, approximately 2 minutes per batch. Once each batch is browned, place the meat in a clean large bowl.
  • Once all of the meat is browned, add the beer to the cooker to deglaze the pot.
  • Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine. Lock the lid in place according to the manufacturer's instructions. When the steam begins to hiss out of the cooker, reduce the heat to low, just enough to maintain a very weak whistle. Cook for 25 minutes. Remove from the heat and carefully release the steam. Serve immediately.

Time 45m

Number Of Ingredients 15

3 pounds beef stew meat, (cut into 1-inch cubes)
2 tablespoons vegetable oil
1 3/4 teaspoons salt
1 (12 ounce)bottle medium ale
16 ounces salsa
30 tortilla chips, (crushed)
2 chipotle peppers canned in adobo sauce, chopped (chopped)
1 tablespoon adobo sauce
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin
cheddar or Monterey jack cheese, (shredded)
tortilla chips
avocado, (cut into cubes)
cilantro, (chopped)

Steps:

  • Dry beef cubes with paper towels.
  • In a large mixing bowl, toss the beef cubes with the vegetable oil and salt; set aside.
  • Turn 6.5-quart Instant pot onto saute function. When the display reads "hot", add the beef in 3 batches and brown on all sides. Remove browned beef to a bowl and continue with remaining beef.
  • Stir the beer into Instant pot and scrape up all the brown bits on the bottom of the pan (do not skip or the burn light may turn on).
  • Add the browned beef back to the instant pot along with salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine.
  • Place the lid on and set the "steam release" knob to "sealing". Press the "Manual" button and set to pressure cook on low for 25 minutes. Then turn the steam knob to venting to release the remaining pressure.
  • After the pin drops, carefully open lid away from you (there will likely still be remaining steam). Stir the chili. Adjust seasoning, ladle into individual bowls and top with desired toppings.

Time 15m

Yield Approximately 3/4 cup

Number Of Ingredients 7

3 ancho chiles, stemmed, seeded and sliced
3 cascabel chiles, stemmed, seeded and sliced
3 dried arbol chiles, stemmed, seeded and sliced
2 tablespoons whole cumin seeds
2 tablespoons garlic powder
1 tablespoon dried oregano
1 teaspoon smoked paprika

Steps:

  • Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.
  • Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.

Tips:

  • Use a variety of beans. Alton Brown's chili recipe calls for three types of beans: kidney beans, pinto beans, and black beans. However, you can use any type of bean that you like. Some other good options include garbanzo beans, navy beans, and Great Northern beans.
  • Soak the beans overnight. Soaking the beans overnight will help to soften them and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute and then letting them sit for 1 hour.
  • Use a good quality chili powder. The chili powder is one of the most important ingredients in chili, so it's important to use a good quality one. Look for a chili powder that is made with a variety of chiles and has a deep, rich flavor.
  • Don't be afraid to add other spices. In addition to chili powder, you can also add other spices to your chili to taste. Some good options include cumin, oregano, garlic powder, and onion powder.
  • Use a variety of vegetables. Alton Brown's chili recipe calls for onions, bell peppers, and tomatoes. However, you can use any type of vegetable that you like. Some other good options include corn, zucchini, and carrots.
  • Brown the meat before adding it to the chili. Browning the meat will help to develop its flavor and make it more tender. You can brown the meat in a skillet or in a Dutch oven over medium heat.
  • Simmer the chili for at least 1 hour. Simmering the chili for at least 1 hour will help to develop the flavors and make the chili more tender. You can simmer the chili on the stovetop or in a slow cooker.
  • Serve the chili with your favorite toppings. Some popular toppings for chili include sour cream, cheese, avocado, and cilantro.

Conclusion:

Alton Brown's Good Eats chili is a delicious and hearty dish that is perfect for a cold winter day. The chili is made with a variety of beans, vegetables, and meat, and it is simmered in a flavorful chili sauce. You can customize the chili to your own taste by adding different spices or toppings.
